Eggnog & Spiced Rum Cake

Spiced rum cake with eggnog frosting will have your guests begging for seconds (thirds!).

Nothing says celebration like cake. Cakes are the quintessential celebratory dessert, as they should be. Layers upon layers of sweetness, covered in beautiful frostings of all sorts and colors. What’s not to love?! And going off of my last Christmas-themed post of 2015, I felt like a boozy cake was in order. This eggnog and spiced rum cake has a plethora of autumnal seasonings. Rum is not only baked into the cake, but is also soaked into it in after the cake has baked.

Finish this cake off with a creamy eggnog frosting that is very boozy. The frosting is made with a touch of cream cheese and it has that delicious,  signature custardy flavor.

And of course I had to make this a naked cake. It’s the only way I ever want to make cakes ever again. I love embracing all the flaws and imperfections, aka not perfectly frosted sides. What do they call that? Rustic. Yeah, sure. ‘Rustic.’

    • I would recommend sticking with rum, as wine as a totally different chemical make up and won’t give this cake the boozy punch it needs 🙂
