I recently saw a hilarious parody article on banana bread. The title: “Man Who Baked Banana Bread Spends Entire Party Watching It Anxiously Go Uneaten.”

I just about died with laugher. The struggle with banana bread is all too real; it truly looks like an inedible brown brick.

But inside that brown brick is the most delicious, moist, flavorful quick bread out there. Yes, despite how it looks, banana bread is the best ever.

Like part of me actually thinks bananas should only be eaten with peanut butter, in a smoothie, or in banana bread. Wait no all of me thinks that.

The secret to making a fantastic banana bread is the moist factor; you want to make sure that your ingredients maximize the moistness of the bread.

My secret to creating this? Greek yogurt. Due to Greek yogurt’s high acidity, it creates both a tanginess and a fluffiness without drying out the bread.

In this banana bread I used Chobani’s Plain Whole Milk Greek Yogurt, which has a slightly higher fat content than non-fat Greek yogurt. This helps keep my banana bread extra moist and gives it the most wonderful texture.

And then there’s the chai spice part. Bananas pair wonderfully with warm cinnamon, cardamom, and ginger. It’s a match made in heaven.

Plus, who would say no to streusel? I have a feeling that if you brought this baby to a party, it would be eaten in minutes. 🙂

Chai Streusel Banana Bread

Ingredients

for the chai spice mix

  • 1 teaspoon ground ginger
  • 3/4 teaspoon fresh ground cardamom
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves

for the banana bread

  • 3 extremely ripe (even brown) bananas, mashed
  • 6 tablespoons butter, melted
  • 1/4 cup sugar
  • 1/2 cup light brown sugar
  • 2 eggs, room temperature
  • 2/3 cup Chobani whole milk plain greek yogurt
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

For the streusel

  • 1/2 cup cashews, finely chopped
  • 1/4 cup sugar
  • 1/4 cup flour
  • 3 tablespoons butter, melted
  • remaining spice mix

Instructions

    1. Preheat the oven to 350ºF. Line a loaf pan with parchment paper.
    2. In a tiny bowl, combine all spices to make your chai spice mix. Set aside.
    3. In a large bowl, combine the mashed bananas with the melted butter, stirring to combine. Mix in both sugars, the eggs, greek yogurt, and vanilla.
    4. Fold in flour, baking soda, salt, and a little over half the chai spice mix, mixing until well combined. Pour batter into prepared loaf pan.
    5. In a separate bowl, mix together the cashews, sugar, flour, melted butter, and the remaining chai spice. Use your hands to work the streusel together, then sprinkle the streusel evenly over the loaf, covering it entirely with streusel.
    6. Bake the loaf for 45 minutes or until a knife comes out clean when inserted into the center of the loaf. If your streusel begins to get golden before the first 30 minutes of cooking, gently cover the top of the loaf with tin foil. This will prevent excess browning.

  1. Hi there! First off, love you! Love your content, love your recipes, love everything!! Now, I love chai! I also love pumpkin, is there anyway to use your pumpkin cream cheese bread recipe with these spices and streusel? Do you think it would come out well?? My fav Starbucks fall drink is a chai latte with pumpkin cold foam. I’d like to recreate this in a bread if possible!

  2. I finally got to trying this recipe and wish I had tried it sooner! What a treat this is and makes the house smell amazing while baking. The baking time took longer ( about 10min), but that seems to be the norm for my oven and banana bread. It had great structure and flavor. I cannot wait for more bananas to turn brown! Thank you!






    • Hi Katie! The eggs help to give the bread structure, but if you are looking to make this egg less you could probably sub them out-it just may change the texture a bit!
