So, I can’t believe I haven’t done this yet. I mean, a smores brownie recipe, come on Sarah. Duh. These smores brownies were such a great way to bring summer into the winter. Like, who doesn’t want a fluffy marshmallow-topped brownie in the middle of December?

Holiday gifts for the photographer

  1. I recently upgraded from the Canon 6D to the Canon 5D mark iv and haven’t looked back. As much as I loooved my 6D, the 5D mark iv is unbeatable.
  2. The Canon 100mm 2.8 is my go-to macro lens. The quality is crystal clear and I couldn’t recommend it more.
  3. If you’re looking for a wider lens, the Canon 24-70 2.8 is the other lens I use for the blog. It’s perfect for everything from overhead shots to travel shots to portraits. It’s seriously the best all-in-one lens on the market.

The most epic Smores Brownies ever: a fudgy dark chocolate brownie with a thick layer of toasted marshmallow fluff, all atop a graham cracker crust.

The most epic Smores Brownies ever: a fudgy dark chocolate brownie with a thick layer of toasted marshmallow fluff, all atop a graham cracker crust.

Ingredients

  • 6 graham cracker sheets
  • 3/4 cup butter
  • 1 cup bittersweet chocolate chips
  • 1 1/3 cup granulated sugar
  • 2 eggs, room temperature
  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon espresso powder
  • 7.5oz marshmallow fluff (or 15oz if you’re feeling crazy)

Instructions

    1. Preheat oven to 350°F. Line a 8″x8″ baking pan with parchment paper, then grease the bottom with butter or spray. Arrange graham crackers in a single layer on the bottom of the pan. Set aside.
    2. In a microwave-safe bowl, melt the butter. Remove from microwave and stir in bittersweet chocolate.
    3. Microwave for 20-30 seconds more. This should melt the chocolate completely. If it doesn’t, put it in the microwave for another 15 seconds.
    4. In a separate bowl, whisk together sugar and eggs. Slowly whisk in the melted chocolate mixture, then fold in the flower, cocoa powder, vanilla extract, salt, and espresso powder with a spatula.
    5. Pour batter into prepared pan. Bake for 25 minutes, then remove from oven and top with fluff. Place back in the oven for 10 minutes, until the fluff turns a nice golden brown color.
    6. Allow to cool completely before removing from pan and cutting into 9 large squares.

  1. I baked the brownies 25 mins and poured the marshmallow creme on top and it fell into uncooked brownie batter….I was hoping I could spread it into an even layer. Did I do something wrong or did anyone else experience this?

    • Hi Sarah! I’m so sorry to hear that! Next time try cooking the brownies for 5 to 10 more minutes befroe adding the marshmallow–your oven might just run a little less hot than ours so your brownies might take a little longer to bake up!

  2. This is so good! I was wondering how the graham crackers would work at the bottom of the brownies, but it worked perfectly and was a great support for the brownie and marshmallow fluff. Thanks for the recipe!
