Is there a better summer flavor than s’mores. I think not. This easy s’mores ice box is the perfect frozen treat for hot days!

That’s right, people. Alex calls this S’mores Ice Box Cake “the best thing you’ve made all year.”

But like I kind of agree. And especially as someone who doesn’t like whipped cream that much, saying that I agree that this S’mores Ice Box Cake is the best thing I’ve made all year, means something.

So what’s in this ice box cake? Layers of graham crackers, chocolate ganache, and a marshmallow fluff whipped cream.

It’s finished off with a homemade Swiss meringue that you torch to look like, whelp you guessed it, toasted marshmallows.

Normally ice box cakes are made in the fridge, but I actually recommend letting this baby chill in the freezer. It keeps the graham slightly crunchy, making it so when you cut into it, each layer stays intact.

But if you want the traditional route, the fridge works totally fine, too!

Also can I just tell you a quick little story.

I bought a blow torch solely to torch this cake. But by the time I realized the torch didn’t have any lighter fluid in it, I had already made the meringue, so I painstakingly held a lighter to this cake and torched each individual crest of meringue to make it look like it was properly torched.

If you’re making this s’mores ice box cake ahead of time, here’s what I’d suggest: make the “cake” part ahead of time, and freeze it (I mean honestly it can last for weeks in the freezer if you store it properly).

The one thing you’ll need to make day of is the meringue. Easy. Peasy.

Ingredients

For the cake

  • 3 cups heavy cream, divided
  • 2 cups semi-sweet or bittersweet chocolate chips
  • 2 cups marshmallow fluff
  • 1 box graham crackers

For the meringue

  • 1 cup sugar
  • 1/2 cup water
  • 4 large egg whites, room temperature

Instructions

    In a small saucepan over low heat, heat 1 cup of the heavy cream until scalding (not boiling!). Remove from heat and pour in chocolate chips.

    Allow mixture to sit for 5 minutes, then stir with a whisk to combine. By this point, chocolate should be fully melted. Spoon into a piping bag and place in the fridge until ready to layer.

    In a standing mixer fitted with a whisk attachment, beat the remaining 2 cups of heavy cream until soft peaks form. Spoon in marshmallow fluff, and whip to combine further until stiff peaks form. Set aside.

    Line the inside of a standard-sized loaf pan with plastic wrap on all sides. Working in layers and starting with the whipped cream mixture, spoon and spread the whipped cream, pipe and spread the ganache, and layer the graham crackers. It’s completely up to you how much you spoon on each layer– if you want more whipped cream, do it! More chocolate, do it!

    Finish with a layer of the whipped cream, then place in the freezer while you make your meringue.

    Place egg whites into a standing mixer fitted with a whisk attachment. Whip egg whites until soft peaks form. 

    Meanwhile, heat sugar and water in a small saucepan over medium heat until the mixture reaches 240°F. If you don’t have a cooking thermometer, use the ice water test– place a small amount of the boiling sugar in ice water. Once the sugar forms a soft, malleable ball, it’s ready. 

    Working slowly with the egg whites still in the mixer, turn your mixer speed to medium and slowly drizzle in the sugar. Continue to mix until the meringue forms stiff peaks. 

    Remove ice box cake from freezer and frost with meringue. Use a culinary torch to finish off and golden-i-fy the meringue, if you have it!

  1. Yes! This popped up just as I was on the hunt for no bake desserts!! It definitely doesn’t look like you took a torch to it. But I admire your tenacity and patience for torching the entire thing with a lighter!!!
