Ingredients for apple cider donut cake

This apple cider cake is way easier to make than apple cider donuts but you will need a handful of ingredients you might not have in your cupboard already. The best part about fall baking is all those perfectly spiced sweets. But all the spices and seasonal ingredients can end up being pretty darn expensive. That’s why I love stocking up on all my baking essentials at ALDI. Head to your local ALDI, shop on Instacart, or pick up groceries curbside (my personal fav), for all the spices, seasonal fruits, and purees you’ll need to make all the tasty treats this fall season at prices you’ll love!

  • Nature’s Nectar Apple Cider: Instead of using milk as the liquid in this cake you’ll use apple cider. Nature’s Nectar Apple Cider will give your cake an extra apple punch. Plus the acidity of apple cider will help give your cake a little extra oompf for that fluffy texture.
  • Stonemill Spices Cinnamon, Nutmeg and Ginger: All Fall baked goods have a combination of cozy spices
  • Sugar: This apple cider bundt cake recipe uses a combination of Baker’s Corner Brown Sugar and Simply Nature Organic Cane Sugar. The brown sugar will deepen the flavor of your cake while the cane sugar works as the perfect cinnamon sugar coating for the exterior!
  • All-Purpose Flour: All-purpose flour will give your bundt cake a delicate and soft crumb that tastes exactly like an apple cider donut.
  • Baking Soda + Baking Powder: A combination of baking soda and baking powder will give you the perfect soft, cakey donut texture.
  • Butter: Butter is the key to a moist and tender cake. You’ll use softened butter in the cake batter and melted butter to coat the exterior of the cake in cinnamon sugar!
  • Salt: All sweet treats need a little salt to cut all the sweetness and deepen the flavor
  • Eggs: 3 eggs will give your apple cider bundt cake just enough structure to hold up to all that cinnamon sugar apple flavor. Make sure your eggs are at room temperature!
  • Apple Sauce: This apple cider bundt cake recipe calls for both apple cider AND apple sauce to pack the cake full of apple flavor and keep it super moist!

Apple Cider vs Apple Juice

Anyone who tries to tell you that apple cider and apple juice are the same is wrong. And apple cider is far superior to apple juice. You can quote me on that. While there are a lot of rumors floating around about the difference between apple cider and apple juice, it comes down to the way they’re processed. Both are made from apples (duh), however apple cider is generally not filtered to remove sediment and it is not pasteurized. This is why you generally find your apple cider at a local apple picking farm or seasonally in the refrigerated section of the grocery store. On the other hand, apple juice, which is filtered and pasteurized stays fresh for ages and the clear, light colored juice can be found on a shelf year round.

For this apple cider cake you’ll need apple cider! Lucky for you, there’s no need to make an extra trip to the apple orchard or farm stand. This fall you can find fresh Nature’s Nectar Apple Cider at your local ALDI.

Tips for the perfect donut bundt cake

This bundt cake is super easy to throw together on a moment’s notice, but these 3 tricks will give you a perfect apple bundt cake every time.

  • Make sure you grease your bundt cake very well for an easy release: There is nothing worse than taking your beautifully baked cake out of the oven only to have it stick to the sides of the pan. We used cooking spray to get into all the nooks and crannies of our bundt pan, but you can also butter and flour your pan for an easy release!
  • Don’t overmix the batter: Overmixing your batter can produce a tough and dry cake. The more you mix, the more gluten builds which can ruin that soft and cakey crumb. Only mix the cake until it’s just mixed.
  • Make sure you’re using apple cider: Apple cider and apple juice might sound similar but they’re wildly different. Make sure you’re using apple cider to ensure your apple cider bundt cake tastes as good as a hot apple cider donut at the apple orchard.

Ingredients

for the apple cider bundt cake

  • 3/4 cup unsalted butter, softened
  • 2/3 cup Baker’s Corner Brown Sugar
  • 2/3 cup Simply Nature Organic Cane Sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs, room temperature
  • 2 3/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 2 teaspoons Stonemill Cinnamon
  • 1/4 teaspoon Stonemill Nutmeg
  • 1/4 teaspoon Stonemill Ground Ginger
  • 1 cup Nature’s Nectar Apple Cider
  • 2/3 cup applesauce

For the cinnamon sugar coating

  • 4 Tablespoons unsalted butter, melted
  • 1/2 cup Simply Nature Organic Cane Sugar
  • 2 teaspoons Stonemill Cinnamon
  • Pinch of salt

Instructions

    1. Preheat the oven to 350°F and generously grease a standard size bundt pan.
    2. Place the softened butter, Baker’s Corner Brown Sugar and Simply Nature Organic Cane Sugar In a stand mixer fit with the whisk attachment. Beat on high speed until light and fluffy, about 3 minutes.
    3. Scrape down the bowl and add the vanilla extract and eggs, one at a time, beating well between each addition.
    4. In a separate bowl combine the applesauce and apple cider, mixing to combine. Set aside.
    5. In another bowl, mix together the flour, baking powder, baking soda, salt and Stonemill spices.
    6. Alternate adding the dry ingredients and the apple cider mixture to the butter mixture in 3 additions, beginning and ending with the dry ingredients. The batter will be thick. Spoon the batter into the prepared pan, spreading it in an even layer. Bake at 350°F for 50 to 60 minutes or until it springs back to the touch and a knife inserted into the middle comes out mostly clean.
    7. Allow the bundt cake to cool for 20 minutes before turning it out of the pan onto a wire rack.
    8. While the cake cools, mix together the cane sugar, cinnamon and salt. Brush the cooled cake with the melted butter and sprinkle the cinnamon sugar to coat the outside. Enjoy warm!

  1. Made this cake last weekend and it was delicious. Baked very well and nicely at 50 minutes. The taste was more cinnamon than apple, but still pleasant. Followed the recipe exactly and achieved great results. Cake/bread had a fine crumb but not dry, moist and held it’s shape very nicely. Would definitely make again. Thanks
