You heard that right: a parfait, with waffle in it. Because waffles aren’t just made for being doused in maple syrup (though if that’s your prerogative, I get you. I understand you. I love you.).

Cherries are one of my favorite summer fruits. My sister and I used to eat them cold out of the fridge, one my one, until our little mouths were stained with cherry juice and we had a bowl full of pits.

To this day, I don’t really like room-temperature cherries. They just taste better cold 🙂

But that really has nothing to do with this parfait, because this recipe uses a quick sautée method to cook the cherries into the most lovely spoon fruits of sorts. You can easily double this recipe if you want to make a big batch, and save half to put over your morning yogurt, or spread on top of a piece of toast.

You know summer is in full swing when, every time you walk down a city street, you have the potential at any time to have an occasional drop of cold water hit your head from the smattering of air conditioners in the high rise above.

And when that time comes, the last thing you want to do is go back to your apartment and turn on the stove. So this month, I’ve been working hard to create the fewest oven recipes I can. This no-bake Cherry & Waffle Parfait is one of them.

I got my waffles at Whole Foods, in the bakery section, which made putting together these parfaits a total breeze. It is the perfect end to a light summer dinner. Or the perfect start to a hot summer day. Whatever floats your boat 🙂

No Bake Black Cherry & Waffle Parfait

Ingredients

For the quick sautéed cherries

  • 3 cups black cherries, pitted (save a few whole cherries for garnishing on top)
  • 1/4 cup lemon juice
  • 1/4 cup granulated sugar

For the rest

  • 2 cups heavy cream
  • 1/4 cup granulated sugar
  • 8 Belgian waffles, broken into pieces

Instructions

    In a medium saucepan over low heat, combine cherries, lemon juice, and sugar. Smoosh cherries slightly with a fork to break them down. Cook, stirring occasionally, until cherries soften and liquid thickens and evaporates almost entirely, about 20 minutes. Allow to cool to room temperature before assembling parfaits.

    Using a stand mixer or a hand mixer, whip heavy cream and sugar to soft peaks. Spoon layers of whipped cream, Belgian waffle pieces, and quick sautéed cherries into glasses, top with whole cherries, and serve!

    • You could definitely use some cooked rhubarb in place of cherries for a rhubarb waffle parfait!

  1. Hi. I really love this recipe, it looks real nice but I was wondering if I could make this with red cherries instead. Finding the black ones here is really hard and I’ll love to make this dessert soon.
