Easy Harvest Pizza

If you know me you know I’m a pizza fiend. In fact, for my birthday this year the only thing I asked for was a pizza oven. Why? Because making homemade pizza is such a fun and easy way to bring your friends and family together for the ultimate pizza night. Alex and I love doing homemade pizza for a date night in with our favorite beer and it’s quickly become a tradition in our home. Tilly doesn’t mind it either 🙂

It’s been a major goal of mine to make pizza year round–not just in the summer because pizza is SO versatile. Which is why I am so excited to celebrate all things Fall with this homemade harvest pizza. It’s topped with blue cheese, caramelized onions, roasted butternut squash and thyme for the ultimate cozy, fall flavor combo.

But Sarah I don’t have a pizza oven!

No problem, boo. You can make pizza with whatever kitchen gadgets you have. An oven or a grill will work too with these quick tips.

  • If using an oven: Set your oven as hot as it can go. Ours goes up to 500° F which is pretty darn hot! If you have one, use a pizza stone to guarantee a nice crispy bottom.
  • If using a grill: Preheat your grill for 15 minutes to around 700°F. This will give you a nice crisp exterior and a soft and chewy crust.
  • If using a pizza oven: Follow the instructions laid out by your pizza oven’s manual!

Tips for the best harvest pizza:

This pizza is super quick and easy to make, but with these 4 tricks you’ll avoid any SNAFUS and get pizza on the table in record time!

  • Prep the butternut squash and caramelized onions ahead of time: Caramelizing onions is the most time intensive part of this recipe, so prep them a day or two in advance (they’ll keep in the fridge for 3 to 4 days). You can roast the squash a few days in advance as well. Simply bake with a drizzle of corn oil and salt at 400°F until tender.
  • Use a pizza stone: A pizza stone is a huge game changer. It heats more evenly and retains more heat than a cookie sheet so you’ll get a crispy bottom and an even rise!
  • Load up on toppings: Everyone loves a loaded pizza. Really pile everything up high to load your pizza with flavors.
  • Use Fleischmann’s® RapidRise™ Yeast: When I have time for it, I love Fleischmann’s Active Dry Yeast, but sometimes you’re just super hungry and dinner can’t come soon enough. Enter Fleischmann’s® RapidRise™ Yeast. It’s gluten free, doesn’t need to be activated in water, and only requires one rise. You could say we’re obsessed.

Units:

Ingredients

  • 22 1/4 cups flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 packet of Fleischmann’s® RapidRise™ Yeast
  • 1 cup warm water
  • 1 tablespoon neutral flavored oil, like corn oil
  • 8 ounces shredded mozzarella cheese
  • 4 ounces crumbled blue cheese
  • 1/2 cup caramelized onions (about 4 onions)
  • 1 cup roasted butternut squash, cut into cubes thyme, to garnish

Instructions

    1. Place pizza stone in the oven and preheat the oven to 500°F.
    2. In a large bowl mix together 2 cups of bread flour, sugar, salt, and Fleischmann’s® RapidRise™ Yeast.
    3. Make a well in the center of the dry ingredients and add the warm water. Using your hands, mix everything together until it forms a dough. The dough will be sticky, but don’t worry, it will come together once you knead it!
    4. Turn the dough out onto a floured surface and knead the dough for 5 minutes or until the texture of the dough starts to smooth out. If the dough feels too sticky, add remaining ¼ cup flour in a tablespoon at a time until the dough is dry enough to work with. Form the dough into a ball and place into a greased bowl. Cover loosely with a dish cloth and put in a warm place to rise for just ten minutes.
    5. While the dough is rising, stir together the corn oil, garlic, and red pepper flakes in a small bowl. Set aside.
    6. After ten minutes, turn the dough out onto a clean work surface. We like to do this on a piece of parchment paper for easy clean up and transport. Stretch out dough into a 12 inch round. Use a pastry brush to brush the dough from the center all the way to the crust with the garlic corn oil mixture.
    7. Sprinkle with cheese and top with caramelized onions, roasted squash, and crumbled blue cheese. Carefully take the pizza stone out of the oven and transfer the pizza onto the hot pizza stone and bake for 10 minutes, rotating halfway through. Take out when the crust is golden brown and the cheese is bubbling.
    8. Let pizza cool for 10 minutes, slice and enjoy!

  1. Loved this pizza! I added broccoli and hot honey to top it off after and it was delicious. I only had all purpose flour, but it came out just fine. I even used a regular sheet pan and it was perfect! I’ll have to invest in a pizza stone though.

  2. When you have a little extra time, homemade pizza is so satisfying! I’m loving all the fun fall recipes I have come across. This one is my favorite. This weekend Harvest Pizza ( with chicken)!
