Easy Mixed Berry Crisp

Is there anything better than in season fruit? I think not. The second the fresh berries pop out at the grocery store I get a little over excited and tend to buy as many as I can get my hands on. So if you’re looking for a way to use up a bunch of extra fruit (or just to please all of your berry fiend friends), this classic mixed berry crisp is calling your name. It’s made with a thick layer of juicy berries and topped with a buttery streusel.

What ingredients do you need for mixed berry crisp?’

One of the best thing about fruity desserts is that nature does a lot of the work. You’re starting off with a naturally sweet and delicious berry base and the buttery streusel topping just pushes it over the edge. You’ll need just 6 super simple ingredients to whip up this delicious berry cobbler. Here’s what you’ll need:

  • Berries: Well, duh! You can use fresh or frozen berries of whatever for this berry cobbler! When the berries are in season I love to load up at the farmers market or Trader Joe’s and use a mixture of raspberries, blueberries, strawberries and blackberries. But feel free to use a mix of whatever is your favorite. Frozen berries are also equally delicious and make this berry crisp super affordable to make.
  • Flour: You’ll need all purpose flour to thicken up the berries and also to bind together your crisp toppig
  • Sugar: You’ll need sugar for both the berry filling and the topping to give this berry cobbler a hint of sweetness. If your berries are super sweet or if you prefer a slightly tarter crisp, feel free to go down on the sugar to taste.
  • Lemons: A little bit of lemon zest and juice will brighten up your mixed berry crisp and give it a little extra oompf.
  • Butter: You’ll need butter to grease your pan and for the buttery biscuit topping. If you are vegan I have had success swapping out the butter with a planted based alternative.

How to make mixed berry crisp

Crisp is seriously one of the easiest desserts on this planet to make. I’m talking 1 bowl, minimal ingredients and about 10 minutes of hands on time. I’d take that over spending hours making a pie any day! Look how easy this berry crisp is to make:

  • Make the berry layer. Place all the ingredients for the berry layer into a buttered pan and mix to coat
  • Make the crisp topping. Combine all the ingredients for the crisp topping in a bowl and mix together until the topping resembles wet sand clumps together when you squeeze it.
  • Drop the topping over the berries and bake. Use your hands to crumble the crisp topping over the berry layer to cover it evenly. Place it in the oven to bake.
  • Top with vanilla ice cream. Once the crisp has cooled every so slightly, serve it up a la mode!
  • Devour!

The secret to making the best mixed berry crisp of all time

By now I think I’ve gotten across my point that crisp is one of the best and simplest desserts to make. But there are a few tricks I have up my sleeve to ensure you can get perfect berry crisp every single time:

  • Use good fruit: The fruit makes up about half of your cobbler, so it’s important to use ripe, sweet berries. Berries can be pricey, so try using a mix of fresh berries and frozen berries so you can splurge on the organic raspberries without breaking the bank.
  • Don’t over mix the biscuit topping: The key to a tender, moist topping is a lightly mixed dough. The more you mix the dough the more gluten will build which can lead to tough, dry biscuits. Ew. Only mix the batter until it’s just combined.
  • Serve with ice cream: You must do this. It is truly a nonnegotiable when it comes to crisp eating. I prefer vanilla ice cream because it adds a rich, creamy layer to the sweet, fruity berry crisp!

Ingredients

  • 7 cups mixed berries (we used blueberries, raspberries, strawberries and blackberries)
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/4 cup flour

for the crisp topping

  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2/3 cup all purpose flour
  • 2/3 cup old fashioned oats
  • 1/4 teaspoon salt

Instructions

    1. Preheat the oven to 350°F and spray an 8 cup pan with cooking spray or butter generously.
    2. Place the berries, sugar, lemon juice, and flour in the prepared pan and use a large spoon to stir everything together right in the pan. Yes–it’s that easy! Make sure the berries are evenly coated and well mixed. Set aside.
    3. In a large mixing bowl combine the oats, flour, sugars, and salt. Stir everything together. Add the melted butter to the dry ingredients and mix well until the mixture forms clumps and resembles wet sand.
    4. Generously sprinkle the berries with the crumble topping.
    5. Bake for 45 minutes or until the berries began to bubble up and the topping has turned golden brown.
    6. Allow to cool before eating. Serve with ice cream! Enjoy 🙂

  1. Been looking for an easy berry crumble recipe, this looks to be it! One question though, can this be made in a 8×8 square pan?

    • Hi Char! Yes it can! It will be thicker though so it will take longer to bake. Alternatively you could also halve the recipe!
