Made with a buttery homemade pie crust and rich, fudgy brownie filling, this brownie pie is the perfect indulgent treat to serve up for any occasion. Everyone loves brownies and everyone loves pie, so I can guarantee that everyone will be asking for this fudge brownie pie recipe!

Ingredients for fudgy brownie pie

If you’re reading this recipe you probably love brownies. And if you love brownies, you probably have the ingredients to make them, so hopefully this shopping list won’t require too many extra items to grab at the store. We recommend making a homemade pie crust because it’s pretty easy and so much tastier than storebought, but if you’re feeling lazy you can certainly use a premade pie crust! Here’s your shopping list:

  • Unsalted Butter
  • Ghirardelli 60% Bittersweet Chocolate Chips
  • Vanilla extract
  • All Purpose Flour
  • Dutch Processed cocoa powder

Tips for getting the fudgiest, most decadent chocolate brownie pie

This brownie pie is surprisingly easy to make, but to ensure that super rich and fudgy chocolate texture, we rounded up our best tips! The smallest differences in your process or your ingredients make a big outcome on the final product, so make sure to follow these!

  • Use high quality chocolate: High quality chocolate will make or break your brownie pie. We used Ghirardelli 60% Bittersweet Chocolate Chips. Ghirardelli has the best chocolate for baking–from their baking bars to chocolate chips, you really can’t go wrong.
  • Don’t over mix the batter: Chocolate can be a little finicky when over mixed, so you’ll want to make sure to not overbeat this batter or you’re at risk of splitting your brownie batter!
  • Do not over bake the pie: The key to that rich, fudgy texture is slightly underbaking the pie so it stays super moist and doesn’t dry out!

How to store this fudge brownie pie

This brownie pie will stay rich and fudgy for over a week if stored properly! By day 7 the crust is definitely starting to get a little soggy, but that rich brownie filling stays luxuriously fudgy for a magical amount of time. We recommend storing this tightly covered to in an airtight container in the fridge for the best results! You can also free this pie for up to 2 months, as long as it’s stored in a freezer safe plastic bag or container!

Ingredients

  • 1 unbaked 9 inch pie crust (homemade or store bought will work!)
  • 3 large eggs, room temperature
  • 1/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2/3 cup Ghirardelli 60% Bittersweet Chocolate Chips
  • 2 teaspoons vanilla extract
  • 1/3 cup all purpose flour
  • 1/3 cup Dutch Processed cocoa powder
  • 1/2 teaspoon salt

Instructions

    1. Preheat the oven to 350°F.
    2. Place your pie dough on a well floured surface and roll out into a large circle to about an 1/8th of an inch thickness. Place your pie dish face down onto the dough circle and use a sharp knife to cut a border 2 inches wider than the pie dish.
    3. Roll the dough over your rolling pin, until it’s fully wrapped around. Unroll the dough over the dish, centering it. Roll the excess dough on the edges in and under towards the dish, like a sleeping bag. Use your fingers to press the dough, sealing it to create a thick outer crust.
    4. Crimp the dough, making a “v” with two fingers one hand on the outside of the pie crust and the index finger of the opposite hand to make an indent in the pie crust. Repeat around the pie until the entire crust is crimped. Place in the freezer to chill while you make the filling.
    5. In a large mixing bowl beat the eggs and sugar until light and fluffy, about 3 minutes.
    6. In a separate microwave safe bowl melt the butter until hot, but not boiling, about 1 ½ minutes. Add the Ghirardelli 60% Bittersweet Chocolate Chips to the butter and let sit for a few minutes to melt the chocolate. Stir the chocolate and butter together until smooth and completely melted. If the chocolate chips do not melt right away, you can place in the microwave for 30 more seconds to heat up the mixture.
    7. Add the chocolate mixture into the egg mixture, mixing until homogenous. Add the vanilla extract and mix well.
    8. Last, add the flour, salt, and cocoa powder to the batter and use a rubber spatula to fold everything together until smooth and no streaks of flour remain.
    9. Remove the pie crust from the freezer and pour the chocolate filling into it, smoothing into an even layer.
    10. Bake at 350° for 25 to 30 minutes, or until the crust is golden brown and the filling is set.
    11. Allow the pie to cool for an hour before placing it in the fridge to chill.
    12. Once chilled, cut into slices and serve! Enjoy!

  1. I’m wondering about adding a layer of ganache and /or caramel to the top once it’s cooked…could I do this? If so, how ?

    • Ooh yum! That would be delicious. I would let the pie cool completely and then you can top it with a layer of caramel or ganache!
