Forget about cookies and milk–why not eat all your cookies with a big ol’ mug of marshmallow topped hot chocolate? Or better yet…make hot chocolate macarons AND wash them down with hot chocolate. You have to go all out on holiday cookies, so if there’s anytime to tackle macarons, it’s now. Especially when said macarons are hot chocolate macarons AKA chocolate marshmallow macarons that taste exactly like a cozy mug of hot cocoa.

What are hot chocolate macarons

These hot chocolate macarons take all the cozy flavors of a steaming mug of hot cocoa and put them into a bite sized, delicate french cookie. We made these hot chocolate macarons with chocolate cookie shells and a melt in your mouth marshmallow filling. They’re the perfect festive holiday cookie to whip up on a Sunday as a fun baking project, or impress everyone with at a holiday party.

Tips for making homemade macarons

I know homemade macarons can feel intimidating, but once you get the hang of it, it’s actually not so bad. Repeat after me, “WE CAN DO THIS.” And the good news is that if all of that fails and your macaron shells still crack or don’t develop feet, they will still be delicious. I promise.

  1. Make sure you don’t get any egg yolks into your whites: Unfortunately if you get egg yolks into your egg whites they will not beat up light and fluffy! I recommend carefully separating each egg white individually so that if you do get a little bit of yolk in you don’t have to toss the whole batch!
  2. Use a kitchen scale: It’s important to be precise with macarons so we recommend using a kitchen scale. This will guarantee you get precisely the right amount of ingredients into your batter.
  3. Make sure your oven temperature is low: Macarons require a low and even oven temperature to prevent any cracking or browning. Make sure your oven is set to 300°F (not 350°F!) to guarantee perfect macarons!

How to store hot chocolate macarons

I like to store these macarons in a sealed container in the fridge. They’ll keep in the fridge for up to 2 weeks! You can freeze macarons normally, but I find that the marshmallow filling gets a little funky on these if you freeze them. If you do want to prep ahead and freeze, you can make the shells and freeze those and then defrost them and make the filling when you’re ready to chow down on some hot chocolate macarons.

Ingredients

For The Chocolate Macarons

  • 100 grams egg whites
  • 100 grams granulated sugar
  • 100 grams almond flour
  • 100 grams powdered sugar
  • 2 tablespoons unsweetened cocoa powder

For the marshmallow filling

  • 1 egg white
  • 1/3 cup granulated sugar

Instructions

    1. Preheat oven to 300°F. Line two baking sheets with parchment paper. Set aside.
    2. Heat a small pot of water over medium heat until it steams. In the bowl of a stand mixer, combine egg whites and granulated sugar. Place bowl over steaming pot, creating a double boiler.
    3. Whisk egg whites and sugar until sugar melts completely and egg whites become white and frothy, 1 to 1.5 minutes. Remove from heat and place bowl back onto standing mixer.
    4. Fit standing mixer with whisk attachment and whisk on high speed for 2-3 minutes, until stiff peaks form. Congratulations, you just made a Swiss meringue!
    5. Sift together almond flour, cocoa powder, and powdered sugar, then gently shake into meringue bowl.
      Place bowl onto stand mixer fitted with a whisk attachment. Turn mixer to medium speed and whisk for 10 seconds. Stop mixer and use a spatula to scoop up some of the batter. If you can make a figure-eight with the dripping batter without the batter breaking, you can stop. But most likely you will need another 5-10 seconds. So repeat process, and try the figure-eight again. The best way to describe the perfect consistency is like slow moving lava. It should give, but only slightly, like in slow-motion.
    6. Once your batter is the correct consistency, scoop it into a large pastry bag fitted with a 1 inch tip. Pipe silver dollar-sized circles onto prepared baking sheets, keeping about 1.5 inches between each meringue. Bang baking sheet on counter two times to remove any air bubbles.
    7. Here’s the fun part: you don’t need to let them air dry. Just pop them into the prepared oven for 13 minutes, turning around halfway through, then allow to cool completely before removing from baking sheets.
    8. While the macarons are baking, make the marshmallow filling. Make a double boiler with a heat safe bowl. Use a whisk to beat egg whites and sugar for the marshmallow filling until frothy and white and the sugar granules have dissolved. Transfer the mixture to stand mixer (or get a heck of a workout doing it by hand) fitted with the paddle attachment. Beat on high speed until the mixture is smooth and glossy and medium stiff peaks form.
    9. Scoop mixture into a piping bag fitted with a star tip and set aside until ready to assemble the macarons.
    10. Once you’re ready, pipe the filling onto a macaron and sandwich with another macaron. Repeat with all macarons. Optional: garnish with melted chocolate!

  1. It’s a really good recipe but I have to mix mine for a lot longer than 2-3 minutes so don’t be afraid to whip them longer because I made them like that and they turned out fine. The only other thing is that the filling is realllllllllly sweet for me. Othwerwise, this is a great recipe.

  2. Can you use egg whites in the carton? Have made macarons in the past but not with Swiss merengue method. Recipe looks easy and tasty!

  3. These taste amazing! I wasn’t totally convinced that they’d taste like hot cocoa, but they definitely do. My only problem was the amount of marshmallow filling that it made was not nearly as much as the photo shows. Maybe I didn’t whip it long enough? I’ll definitely be trying again
