I know these bars look like a lot and sound like a lot…and quite frankly they are. They’re indulgent, rich and definitely fit into the “more is more” category… BUT the ingredients are actually super simple!

How to make homemade caramel

If you’re scared of making homemade caramel raise your hand! Caramel is undeniably an intimidating confection to whip up if you’re not familiar with making it. It requires slowly heating sugar until it’s completed melted, constant stirring, and a little patience, but it’s actually pretty easy once you get the hang of it! You can check out our full tutorial on how to make homemade caramel here!  Make sure you use 1/3 cup of cream instead of 1/2 cup of cream as listed in the tutorial to keep the caramel nice and thick for these peanut butter pretzel bars.

How to customize peanut butter pretzel bars

If you follow the recipe the “t” you’ll end up with a crunchy, gooey, salty-sweet, explosion that tastes like a chocolate covered peanut butter pretzel + caramel. Which is pretty much the best thing in the entire world. BUT, if you’re looking to cut down on time, or don’t want to make homemade caramel, there are ton of different ways you can tweak this recipe!

  • Omit the caramel, and top with chocolate instead: Simple omit the caramel and melt a 12 ounce bag of chocolate chips in the microwave, stirring every 30 seconds until completely melted. Pour the chocolate over the peanut butter pretzel layer and top with crushed pretzels.
  • Forget about the chocolate drizzle and use store bought chocolate covered pretzels instead: If you want to add a little chocolate (who wouldn’t) but are too lazy to melt down chocolate to drizzle, you could use store bought chocolate covered pretzels to cut out a step!

Ingredients

for the peanut butter pretzel bars

  • 3 cups crushed pretzels
  • 1 cup creamy peanut butter
  • 1/4 cup butter, room temperature
  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

for the caramel pretzel top

  • 1 cup granulated sugar
  • 6 tablespoons butter, room temperature
  • 1/3 cup heavy cream
  • 1 teaspoon sea salt
  • 1/2 cup whole pretzels for the top

Instructions

    1. Line an 8 x 8 ” square pan with parchment paper on all sides. If you don’t have parchment paper, you can line it with tinfoil and then grease the tinfoil very liberally. Set aside.
    2. Roughly crush up pretzels in a food processors or place in a large plastic bag and use a rolling pin to break them down. Measure out 3 cups of crushed pretzels and set aside.
    3. In large mixing bowl, beat together the butter and peanut butter until homogenous. Add the powdered sugar and vanilla. Mix well. Last, stir in the crushed pretzels.
    4. Transfer the peanut butter pretzels mixture to the prepared pan and press into an even layer and put in the fridge to set while you make the caramel layer.
    5.  In a heavy bottomed sauce pan, heat the sugar on medium low heat until its completely melted, swirling the pan gently every 20 seconds or so. The sugar will start to form clumps before melting slowly. Be patient and keep an eye on it to make sure it does not burn.
    6. Once melted, remove from heat immediately and stir in the butter. The mixture will violently bubble. You’re doing it right. Next, pour in the heavy cream and sea salt. Stir until everything is combined. Pour into a large bowl and allow to cool for a few minutes.
    7. Add the additional 1/2 cup of whole pretzels to the caramel and stir to coat the pretzels.
    8. Spread the caramel coated pretzels over the peanut butter bars. If desired, drizzle with melted chocolate! Lift the foil out of the pan with the bars, peel the foil off, then using a sharp knife, cut into squares.

  1. Going to make these this weekend but I’m confused… I see chocolate in the picture but not in the recipe. Is there chocolate in these?

    • Hi Brooke! We just drizzled them with chocolate but there is not chocolate in the actual bar! You could totally use chocolate covered pretzels if you wanted to make them into a pb chocolate bar!
