Super Fudgy Sweet Potato Brownies

Okay, so, if you know anything about me it’s that I’m somewhat of a brownie fiend. Like, it’s borderline a problem. And while I don’t think you should ever feel badly about indulging in a sweet treat, every so often it is nice to add in a scrumptious treat that also provides some health benefits.

But if I’m eating healthy I don’t want to know it. It should taste just as scrumptious as a regular ol’ brownie and just happen to be a little more nutritious. And believe me when I tell you these fudgy sweet potato brownies will blow your mind.

What are sweet potato brownies?

These healthy brownies are made with a secret ingredient that keeps them rich, fudgy and healthy: sweet potatoes. They provide a caramelly sweetness as well as a dense, decadent texture that tastes exactly like a classic brownie.

Now I know that sweet potato brownies aren’t exactly a new thing. They’ve been around for a while as a great, healthier alternative, but I was really sold on sweet potato brownies after first bite. The secret is slow cooking your sweet potatoes until they’re the sweetest, gooiest, nearly syrup consistency. They add sweetness and an incredible fudgy texture AKA a healthy brownie I could only dream of.

The best part about these sweet potato brownies is that you’ll only need 9 ingredients to whip up this healthy chocolate dessert. Here’s your grocery list:

  • Sweet Potatoes
  • Maple Syrup
  • Oil
  • Almond Butter
  • Flour
  • Vanilla
  • Cocoa Powder
  • Salt
  • Baking Powder

Tips for the best healthy brownies

These healthy brownies are easy enough to whip up on a whim, but these 3 tips will guarantee you perfect, sweet potato brownies every time.

  • Slow roast the sweet potatoes: I cannot stress enough  how important this step is to the final product. Slow roasting the sweet potatoes will cook up sweet and super tender. I know it will take a few extra hours, but you can do it at anytime to prep!
  • Use high quality cocoa powder: This brownie recipe is very simple, so it’s important to use high quality ingredients. We love Rodelle!
  • Don’t over bake them: Over baked brownies are dry and sad. You want fudgy, gooey brownies, so make sure you take them out of the oven just when they’re done baking!

Ingredients

  • 1 cup mashed sweet potatoes (about 3 potatoes!)
  • 1/2 cup maple syrup
  • 4 Tablespoons oil or melted butter (avocado oil, vegetable oil, coconut oil, or whatever you prefer will work!)
  • 2 Tablespoons creamy almond butter
  • 2 teaspoons vanilla extract
  • 2 teaspoons espresso powder
  • 2/3 cup cocoa powder
  • 1/3 cup flour (all purpose, gluten free, and oat flour all worked well!)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

    1. Preheat the oven to 375° and line a cookie sheet with parchment paper. Use a fork to poke multiple holes into your sweet potatoes. Place the potatoes on the prepared cookie sheet and roast for 2 hours, rotating the potatoes about halfway through. Once the potatoes are very tender and oozing, take them out of the oven and allow to cool completely.
    2. Once the potatoes are cool, cut in half and use a large spoon to scoop out the inside into a bowl or a blender. If using a blender, blend on high until creamy. If not, you can always just mash with a fork!
    3. Add the maple syrup, oil, almond butter, and vanilla to the potatoes and stir to combine.
    4. Add the cocoa powder, flour, espresso powder (if using), baking powder, and salt. Beat until completely combined and no streaks of flour remain. The batter will be thick, but should be creamy!
    5. Preheat the oven to 350°F and line an 8 x 8 pan with parchment paper on all sides. Spoon the the brownie batter into the prepared pan and use a rubber spatula to spread it all the way to the edges in an even layer.
    6. Bake at 350°F for 30 minutes or until a knife inserted into the middle comes out mostly clean. Allow to cool completely before slicing into 16 brownies. Enjoy!

    • Hi Olivia! I’ve never tried it personally, but I think it would probably lead to a more crumbly brownie!

        • Is it 3 big potatoes or 3 small potatoes because I looked up 133 grams sweet potato on internet and they said it’s only one sweet potato. So I’m a bit confused but I want to try the recipe so bad

          • Hi Joana! We used 3 medium sized potatoes. The grams conversion can be a little funky sometimes!

  1. A friend made these and they were to die for, but she used coconut flour with led to some upset stomachs. Would you recommend almond flour or just get some oat flour?

    • They definitely are VERY moist haha. You could add a bit more flour if you’d like to dry them out a smidge, or you could also bake them longer! Hope this helps 🙂
