Single Serve Peanut Butter Cookie

Sometimes you have a hankering for a soft and chewy peanut butter cookie, but you don’t want to make a whole batch of cookies just for you. That’s where this single serve pb cookie comes in! This recipe will make two perfectly soft and chewy cookies that are packed full of nutty flavor. The perfectly portioned dough comes together in 5 minutes (no chill time!) and bakes up in 11 minutes, so you can go from craving a peanut butter cookie to having one in your belly in under 20 minutes.

What is a single serve peanut butter cookie?

Anything is a single serve dessert if you put your mind to it. But this single serve peanut butter cookie recipe makes two perfectly soft and tender peanut butter cookies (plus a little cookie dough for eating while you wait for them to bake..duh). Because sometimes you want cookies, but you don’t want 20 of them laying around. It can be a waste!

Adapted from my favorite soft and chewy peanut butter cookie recipe, this single-serve version is just as soft, tender, chewy, and supremely peanut butter-y as the larger recipe!

Ingredients for this single serve peanut butter cookie

You probably know this about me, but I am a cookie monster. So, I pretty much always have the ingredients lying around to whip up a batch of peanut butter cookies. And if I don’t have all the ingredients I start to stress out, because what if I just NEED a cookie and don’t have what I need to make them?! My worst nightmare!

Which is why I always stock up on all my baking ingredients at ALDI. They have everything you need from flour to butter and pretty much everything in between.   • Countryside Creamery Unsalted Butter: Peanut butter cookies are usually made with a combination of butter and peanut butter. This recipe is heavy on the pb, so you’ll need 1 Tablespoon of butter! Make sure your butter is at a soft room temperature, so it incorporates smoothly with the peanut butter!
  • Peanut Delight No Stir Creamy Peanut Butter: DUH. You can’t make peanut butter cookies without peanut butter! We LOVE the Peanut Delight No Stir Creamy Peanut Butter from ALDI–it’s super smooth and creamy and supremely nutty so it’s perfect for baking with or eating with a spoon!
  • Baker’s Corner Brown Sugar: Brown sugar will keep your cookies super soft and tender because it sweetens and adds moisture!
  • Egg Yolk: One single egg yolk will give your cookies structure without making them too eggy! You can save your egg white and use it in a pavlova or even make macarons!
  • Baker’s Corner All Purpose Flour: All-purpose flour will give your cookies a soft and tender texture and hold everything together.
  • Stonemill Pure Vanilla Extract: Vanilla extract is a staple ingredient in most homemade baked goods for a reason. It really brings a delicious, nuanced flavor to all your sweet treats.
  • Baking Soda: A little baking soda will give your peanut butter cookies that nice crackly top and rise!
  • Salt: All sweet treats need a little salt to offset any overpowering sweetness.

How to make a single serve peanut butter cookie

You won’t believe how incredibly easy it is to whip up these peanut butter cookies. You only need one bowl, a fork, and a set of teaspoons, so these are the perfect dessert to make if you’re somewhere with minimal baking tools, or if you just don’t feel like starting a whole production just to satisfy your sweet tooth.

  1. Combine the butter, peanut butter and sugar in a bowl and mix to combine.
  2. Add the egg yolk and vanilla extract. Mix together.
  3. Add the rest of the ingredients. Mix until combined.
  4. Scoop into two large cookies.
  5. Bake for 11 minutes or until the cookies are set on the edges, but gooey in the middle.
  6. Allow to cool before eating.

Tips for the best peanut butter cookies

Single serve cookies are super easy to make, but because they are such a small batch, they are not the most forgiving of recipes. You’ll need to follow the recipe closely to guarantee you perfectly chewy peanut butter cookies, and luckily, I have all the tips you’ll need:

  • Measure your ingredients very precisely: Because this batch of cookies is so tiny it’s important to measure everything super precisely because there is not much wiggle room for error. Make sure you’re leveling off your Tablespoons and teaspoons and following the recipe closely!
  • Make sure your butter is at room temperature: It’s important that your butter is at the same temperature and state as your peanut butter to make sure the two mix together seamlessly. I like to leave the butter out on the counter for about an hour before using it to make sure I don’t end up with any lumps of butter in my batter.
  • Underbake the cookies slightly: The key to soft and chewy cookies is underbaking them a bit so that the centers stay soft and gooey. Cookies will continue to bake as they cool and release the heat from the oven, so you’ll want them to be slightly underdone in the middle when you take them out of the oven!

Ingredients

  • 1 Tablespoon Countryside Creamery Unsalted Butter, room temperature
  • 3 Tablespoon Peanut Delight No Stir Creamy Peanut Butter*
  • 4 Tablespoons Baker’s Corner Brown Sugar
  • 1/2 teaspoon Stonemill Pure Vanilla Extract
  • 1 egg yolk
  • 3 Tablespoons Baker’s Corner All Purpose Flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • Granulated sugar, optional

Instructions

    1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
    2. Combine the room temperature butter, peanut butter, and brown sugar in a small bowl. Use a fork to mix together until smooth.
    3. Add the egg yolk and vanilla extract and mix well.
    4. Add the flour, salt, and baking soda and use a rubber spatula to fold everything together until smooth and no streaks of flour remain.
    5. Use a 1.5-ounce cookie scoop to scoop out two large cookies. If desired, roll in some granulated sugar.
    6. Place on the prepared cookie sheet two inches apart.
    7. Bake for 11 minutes or until the cookies have puffed up and are set on the edges but are still slightly gooey in the middle.
    8. Allow to cool completely before eating! Enjoy!

Notes

  1. We have tested this recipe with this specific peanut butter from ALDI as well as Jiff and Skippy peanut butter and it works out beautifully. If you use a different brand of peanut butter we cannot guarantee it will work!
