When I was little, my dad, sister, and I would go on ski trips. We’d spend all day outside in the cold, going up and down the mountain. My body would shiver and my teeth would chatter, but I loved the rush. I’d sing to myself the whole way down the mountain, sometimes even out loud, because I’d whoosh down so fast that no one could hear me if they tried.

When it was time to go to the ski lodge for a meal, my eyes would light up, because I knew that meant I’d get hot chocolate. I’d walk into the lodge in my ski boots dripping with snow. I’d yank off my top 3 layers, then rush to the cafeteria to get a huge meal, complete with hot chocolate. Sometimes two mugs.

Even now when I think of ski trips, I think of hot chocolate. The sweet steam on my face. The rich chocolate sliding down my throat. The. Best.

Of course, as an adult, I like making my hot chocolate a little more… grown up. This is where the magical “mocha” comes in. Let’s be real: mocha is the adult’s hot chocolate. Let’s also be real: adults still love childhood sweets. Who doesn’t want a little chocolate in their coffee? So I’ve made this Ultimate Skinny Caramel Mocha for those times you want to indulge, sans guilt.

How to make a mocha

Making a skinny mocha at home is SO easy. Spoiler: the key to making this caramel mocha so good is a combination of cocoa and dark chocolate. You get a great amount of flavor from the cocoa, with added richness from the dark chocolate. Of course, brewing a great coffee is key, too 🙂 If you’ve never made a homemade mocha, here are the basic steps for making one:

Heat the coffee and creamer — Brew your coffee as you normally would, whether you prefer instant, drip, or another kind of coffee. Then, stir in the caramel creamer (I used the International Delight Simply Pure Caramel Creamer). Heat the coffee and creamer in the microwave for 1 minute.

Stir in the flavorings — Once the coffee mixture has been heated through, stir in the cocoa powder, dark chocolate, and honey (feel free to add another sweetener, if desired). If the chocolate doesn’t melt completely after 30 or so seconds, heat the mocha in the microwave again.

Top with whipped cream — What’s a homemade caramel mocha without a healthy dollop of whipped cream on top? This step is totally optional, but it makes me so happy!

Ingredients

  • 3/4 cups coffee
  • 1.5 tablespoons Simply Pure Caramel Creamer
  • 1 tablespoon cocoa powder
  • 1 tablespoon dark chocolate, chopped
  • 1 teaspoon agave or honey
  • light whipped cream, for topping (optional)
  • chocolate shavings, for topping (optional)

Instructions

    1. In a microwaveable mug, heat coffee and creamer for 1 minute.
    2. Remove from microwave. Stir in cocoa powder, dark chocolate, and honey. Chocolate should dissolve completely. If it doesn’t, heat for 30 seconds more.
    3. Top with light whipped cream and chocolate shavings!
