Strawberry Frosting

Happy frosting Friday everyone! Today we’re sharing something special: strawberry frosting. Now I know that strawberry isn’t exactly a staple buttercream recipe, but once you taste this fruity buttercream you’ll want to frost everything with it. You have been warned.

What is strawberry frosting?

Strawberry frosting is exactly what it sounds like: frosting made with strawberries! Now you can buy a can of strawberry frosting in the baking aisle but it’s loaded with artificial flavors and red dyes. This homemade strawberry frosting is made with real strawberries meaning it’s naturally flavored with no funky ingredients or added food coloring. Ya heard me right, that lovely pink color is au natural.

The secret ingredient? Freeze dried strawberries.

What do you need to make strawberry frosting?

Homemade frosting is actually incredibly simple and easy to make and it’s *SO* much better than any store bought can of frosting you’ll find in the grocery store.

  • Freeze Dried Strawberries: Freeze dried strawberries are what elementary school Sarah would call “astronaut strawberries”AKA the strawberries in Special K. AKA they have ALL the moisture removed. Unlike dried fruit like raisins, mango, etc. freeze dried strawberries are completely waterless meaning they’ll grind up into a perfect powder for frosting.
  • Powdered Sugar: All classic buttercream frostings call for powdered sugar to both sweeten and thicken the frosting! If you’re looking to make this frosting into pipe-able roses or lettering you can add more powdered sugar to stiffen it up!
  • Unsalted Butter: Unsalted butter is the base of this strawberry buttercream. Make sure your frosting is at true room temperature to ensure it beats up into a smooth, creamy icing.
  • Vanilla extract: Pure vanilla extract will take your frosting from good to gourmet! We love Rodelle.
  • Milk: When it comes to frosting you’ll want to use whole milk, cream, or even half and half. A higher fat, creamier milk with incorporate better into the butter and prevent your frosting from splitting.
  • Salt: Okay so I didn’t include salt in the ingredient count because it’s not realllly an ingredient but it is incredibly important to round out the flavor profile and cut any sweetness.

Tips for the best strawberry butter cream

  • Use freeze dried strawberries: We tried making this strawberry frosting with fresh strawberries, strawberry jam and strawberry extract and freeze dried strawberries are just the way to go. They are real strawberries so you don’t get any of that cloyingly sweet artificial strawberry taste, but because they’re dried they won’t make your frosting gummy or watery. It’s a win a win and you simply cannot use anything else in this recipe!
  • Make sure the butter is room temperature: This is a must for all frosting recipes. Cold butter will not beat up into a silky smooth, fluffy frosting so make sure to leave your butter on the counter for a few hours or overnight to get it nice and soft.
  • Trust your gut: Frosting is very forgiving and depending on the consistency you need for whatever you’re frosting you might want to add more or less sugar, milk, or flavoring. Taste test as you go along and adjust as needed!

How to make strawberry frosting:

Let’s break it down to take out any guess work. I present to you: strawberry buttercream.

1. Beat the softened butter in a stand mixer until creamy.

2. Add the powdered freeze dried strawberries to the butter.

3. Scrape down the bowl and add the powdered sugar, milk, vanilla and salt. Beat well.

4. Scrape down the bowl and beat until light and fluffy, about 2 minutes.

5. Transfer to a piping bag or use an offset spatula to frost whatever your heart desires!

Ingredients

  • 1 cup freeze dried strawberries
  • 3/4 cup unsalted butter, room temperature
  • 3 cups powdered sugar
  • 3 Tablespoons whole milk or cream
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions

    1. In a high powered blender or food processor, pulse 1 cup of freeze dried strawberries until they form a very fine powder. Set aside.
    2. In a stand mixer fit with the whisk attachment, beat the softened butter until creamy, about 1 minute.
    3. Add the powdered strawberries and beat until combined, about 1 minute.
    4. Scrape down the bowl and add the powdered sugar, milk, vanilla and salt. Beat until completely combined, about 2 minutes. Scrape down the bowl and add an additional Tablespoon of milk if needed to get the right consistency. Beat until light and fluffy.
    5. Transfer to a piping bag or use an offset spatula to frost all your sweet treats! Enjoy.

    • Hi Katie! It’s okay if they’re out for a few hours, but if they’re going to be out for a long time I would recommend refrigerating them!

    • Hi Lisa! We use this recipe to frost an 8 inch cake and it’s the perfect amount! You might want to do 1.5 times the recipe for a 9 inch cake just because it is a bit bigger, but it would be fine if you want to go a little more naked cake-y
