Tahini Banana Bread

Banana bread is having a moment. And we’re not complaining. I don’t know about you guys, but our house has seen one or two banana breads a week lately. And while a classic chocolate chip banana bread is obviously delicious, sometimes you want to jazz it up a little and try something fun and different. So when we saw those bananas starting to brown and a half a jar of tahini in the cupboard, we knew we had to make a perfectly moist,  tahini banana bread. It’s lightly nutty, salty-sweet, and tastes seriously gourmet. You’re going to love it.

What is tahini?

Tahini is quickly becoming one of 2020’s trendiest foods. But, some of you may be asking “What the heck is Tahini? I know I’ve heard of it, but what is it?” Well, tahini is sesame seed paste. So, think peanut butter, but with sesame instead of peanuts. Tahini is especially popular in Middle Eastern recipes, and you’ve probably eaten it without realizing it. Tahini is often reserved for savory recipes, like hummus, but it’s the perfect complement to sweet desserts too!

If you’ve tried tahini before and didn’t like it, chances are that you tried bad tahini (it totally exists!). Good tahini is uber creamy and slightly nutty, but there are quite a few less-than-amazing tahini brands sold at the store. (Bad tahini is weirdly dry and bitter).

Units:

Ingredients

  • 3 overripe medium bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 eggs, room temperature
  • 1/2 cup tahini
  • 3/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/4 cups all purpose flour

for the tahini glaze

  • 2 Tablespoons of tahini
  • 1 Tablespoon cream or milk
  • 1 cup powdered sugar
  • pinch of salt
  • sesame seeds for topping, optional

Instructions

    1. Preheat oven to 350ºF. Grease a 9 x 5 inch loaf pan and set aside.
    2. In a large bowl, whisk together mashed bananas with the melted butter, stirring to combine. Add the brown sugar and white sugar. Whisk to combine. Add the tahini and eggs and whisk until fully combined.
    3. In a separate bowl, combine the flour, baking soda, and salt. Fold the dry ingredients into the wet. Do not over mix! Transfer the batter to your prepare pan.
    4. Bake for 50 minutes, or until a knife inserted in the center comes out clean. Allow to cool for 15 minutes before removing from loaf pan.
    5. While the bread cools, make the glaze. In a small saucepan over medium heat, combine the tahini, milk, sugar, and salt and whisk vigorously until smooth and no clumps of sugar remain. Pour the glaze over the warm bread and sprinkle with sesame seeds if desired!

Notes

  • 3 mashed bananas is about 1 cup!
  • If the top of the bread is browning too fast, cover the bread with tinfoil and place back in the oven to finish baking

  1. My mom has been begging me to make something with our overripe bananas. Last time we had banana-bread-ripe bananas, i used the wrong recipe and my mom disliked the bread:/ So this time I kept putting off the baking until I find the perfect recipe. I searched for two days hoping to find a recipe with a key ingredient that my mom would really enjoy.
Coming from a Middle Eastern household, once I saw tahini in this recipe, going straight to baking was a no brainer. I grabbed the bananas and the tahini and made the most delicious banana baked good ever! Thank you so much for this recipe, my mom and I loved it!

  2. This bread is very good, especially if you like Tahini. Mine had to cook about 10 mins longer, but didn’t dry out. My glaze did come out rather thick, and I only used 3/4 of the powdered sugar. Probably needed more milk. I would definitely make again. I bet it’s delicious even without the glaze.

  3. A classic recipe with a stellar tahini twist. My goodness, this was a real treat to enjoy. Surprisingly rich without being too sweet. I was truly blown away at how lovely the bake was. So easy to make too as I had all ingredients on hand. Used Trader Joe’s tahini, very creamy. Great call on tenting the foil, prevented too much browning on top. I’ll be making this many times over in the future. Please do a tik tok on this recipe. The world needs to know!
