Ingredients
- 1 pound gold baby potatoes
- 2 Tablespoons olive oil
- 4 cloves of garlic, finely minced
- 2 teaspoons salt, or to taste
- Freshly cracked pepper, to taste
- Chives, optional
Instructions
- Line two cookie sheets with parchment paper and preheat your airfryer to 400°F.
- Fill a large pot with water, 1 teaspoon of the salt, and the potatoes.
- Bring the water to a boil over high heat. Cook the potatoes until they are fork tender, about 20 minutes.
- Once the potatoes are cooked, drain them and toss with olive oil, garlic, and the remaining salt.
- Place the potatoes a few inches apart on the prepared cookie sheets and use a fork or the bottom of a glass to smash the potatoes down to about ¼ inch thickness.
- Bake in the air fryer for 20 minutes. Use a spatula to flip the potatoes over and bake for another 20 minutes or until the potatoes are golden brown.
- Serve hot!
