Ingredients
- 3 cups champagne (or sparkling wine)
- 1/2 cup granulated sugar
- 1 Tablespoon lemon juice
- 4 Tablespoons (4 envelopes) unflavored gelatin
- 1 cup vodka
- sprinkles, optional
Instructions
- Line an 8 x 8 pan with plastic wrap on all sides*. Set aside.
- Combine the champagne, sugar, and lemon in a heavy bottom sauce pan over medium-low heat. Stirring with a whisk, cook until the sugar granules have completely dissolved.
- Add the gelatin and whisk. Add in vodka and whisk to combine. Do not let the mixture boil.
- Pour the mixture into your prepared pan and place in the fridge for at least 3 hours to set.
- If desired, top with sprinkles before slicing into 16 squares and serving!
