1 large bunch fresh thyme leaves (leave out a few for garnish)
for one cocktail:
2 fresh figs
3/4 oz fresh lemon juice
3/4 oz thyme syrup
1.5 oz Absolut Elyx vodka
1.5 oz hard cider
In a small saucepan over low heat, simmer the sugar, water, and thyme leaves for 5 minutes. Remove from heat and allow to sit for at least 10 more minutes so the thyme infuses into the syrup.
To make the cocktail, muddle figs and lemon juice into a cocktail shaker. Add in a generous scoop of ice, along with lemon juice, 3/4 oz of the thyme syrup, and vodka. Shake until well chilled, then strain into a coupe glass. Top with 1.5 oz hard cider (or to the brim of the glass). Garnish with a slice of fig and a sprig of thyme!
