Ingredients
- 1 cup old fashioned oatmeal
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1/2 cup canola (or vegetable) oil
- 3/4 cup granulated sugar
- 2 tablespoons dark molasses
- 1 egg
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
- 3/4 teaspoon salt
- 4 oz bittersweet chocolate, roughly chopped
Instructions
- Preheat oven to 350°F. Line an 8″x8″ baking dish with parchment paper and set aside.
- In a medium bowl, mix together the oil, sugar, molasses, egg, and vanilla. Next, stir in both flours, the baking soda, salt, and chocolate. Last, mix in the oatmeal.
- Pour into baking dish and press down gently to even out the dough. Bake for 25-30 minutes, or until a knife inserted in the center of the pan comes out clean (not counting the melted chocolate!). Allow to cool for 10 minutes before removing from pan & cutting into squares.
