- 1 tablespoon unsalted butter, at room temperature
- 3 tablespoons creamy peanut butter*
- 4 tablespoons packed light brown sugar
- 1/2 teaspoon vanilla extract
- 1 large egg yolk
- 3 tablespoons all-purpose flour
- 1/8 teaspoon salt
- 1/8 teaspoon baking soda
- Granulated sugar, optional
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Combine the room temperature butter, peanut butter, and brown sugar in a small bowl. Use a fork to mix together until smooth.
- Add the egg yolk and vanilla extract and mix well.
- Add the flour, salt, and baking soda and use a rubber spatula to fold everything together until smooth and no streaks of flour remain.
- Use a 1.5-ounce cookie scoop to scoop out two large cookies. If desired, roll in some granulated sugar.
- Place on the prepared cookie sheet two inches apart.
- Bake for 11 minutes or until the cookies have puffed up and are set on the edges but are still slightly gooey in the middle.
- Allow to cool completely before eating! Enjoy!
Notes
- We have tested this recipe with this specific peanut butter from ALDI as well as Jiff and Skippy peanut butter and it works out beautifully. If you use a different brand of peanut butter we cannot guarantee it will work!
