1/2cup unflavored protein powder (I used collagen peptides)
zest of 1 orange
1 teaspoon water
1/4cup unsalted almonds, very roughy chopped
1/4cup dried cranberries
1/4cup white chocolate, melted
Instructions
In a food processor, pulse the dates until smooth. Add in the almond butter, maple syrup, and coconut oil. Pulse again until combined.
Transfer to a large mixing bowl. Add in oat flour, oats, protein powder, orange zest, and water. Mix until combined. Fold in almonds and dried cranberries.
Roll mixture into 1 1/2 inch balls. press down between two pieces of parchment paper. Place in fridge to set for at least 30 minutes.
Once set, remove from fridge and drizzle with melted white chocolate, if using. Bars last up to 2 weeks in the fridge.
