Raw, gluten-free, and vegan, these No-Bake Cranberry Orange Breakfast Bars are the best way to start your day.

Units:

Ingredients

  • 1 cup pitted dates
  • 1/4 cup plus 2 tablespoons almond butter
  • 2 tablespoons maple syrup
  • 1 1/2 tablespoons coconut oil, melted
  • 3/4 cup oat flour
  • 1/2 cup old fashioned oats
  • 1/2 cup unflavored protein powder (I used collagen peptides)
  • zest of 1 orange
  • 1 teaspoon water
  • 1/4 cup unsalted almonds, very roughy chopped
  • 1/4 cup dried cranberries
  • 1/4 cup white chocolate, melted

Instructions

  1. In a food processor, pulse the dates until smooth. Add in the almond butter, maple syrup, and coconut oil. Pulse again until combined.
  2. Transfer to a large mixing bowl. Add in oat flour, oats, protein powder, orange zest, and water. Mix until combined. Fold in almonds and dried cranberries.
  3. Roll mixture into 1 1/2 inch balls. press down between two pieces of parchment paper. Place in fridge to set for at least 30 minutes.
  4. Once set, remove from fridge and drizzle with melted white chocolate, if using. Bars last up to 2 weeks in the fridge.
