- 2 tablespoons (28g) unsalted butter, melted
- 3 tablespoons (39g) packed light brown sugar
- 1 large egg yolk
- 1/2 teaspoon vanilla extract
- 1/4 cup (32g) all-purpose flour
- 1/4 cup (25g) old-fashioned rolled oats
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 1/4 teaspoon cinnamon
- 2 tablespoons chocolate chips, plus more for topping
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside.
- In a small mixing bowl, add the melted butter and brown sugar and whisk to combine. Add the egg yolk, and vanilla extract and mix until smooth and homogenous.
- Add the flour, oats, salt, baking soda, and cinnamon. Mix until just combined and no streaks of flour remain. Last, fold in the chocolate. Do not over mix.
- Shape into 2 huge cookies (or 4 smaller cookies) and place on your prepared cookie sheet.
- Bake until the edges are just golden brown and the centers have puffed up but are still gooey, 11 to 12 minutes.
- Allow to cool before eating!
