Single Serve Oatmeal Chocolate Chip Cookies
A cookie just for you. This single serve oatmeal chocolate chip cookie recipe makes the perfect size cookie, by which I mean two cookies. They’re soft in the middle, crisp on the edges, and packed with melty chocolate chips. The perfect small batch dessert for when you want a homemade cookie.

Small Batch Oatmeal Chocolate Chip Cookies
Sometime you want to bake cookies. Exactly two cookies. Not 24 cookies. Just two perfect, warm, gooey oatmeal chocolate chip cookies. Enter stage right (or left): single serve oatmeal chocolate chip cookies.
These oatmeal chocolate chip cookies are soft and chewy in the middle, crispy around the edges, loaded wtih melty chocolate chips and packed with just enough oats to give them that classic oatmeal cookie texture without getting crumbly. And because this is a small batch recipe , you can go from I want a cookie to I am actively eating a cookie in about 20 minutes.

The perfect size batch cookies (by which I mean two giant cookies)
This recipe makes exactly two large cookies (or 4 small) because I firmly believe that is the perfect cookie recipe size. One cookie is a snack. Two cookies is a serving.
There is something deeply satisfying about making a recipe that is actually designed for the amount of dessert you want to eat. You don’t need to pull out a stand mixer, dirty six bowls or clear out freezer space to store the remaining two dozen cookies. This is a small batch recipe that makes two generously sized cookies. They’re big enough to feel like a real bakery style treat, so don’t worry there will be plenty of cookie to go around if you feel like sharing with your roommate.

What ingredients do you need to whip up these cookies?
You’ll only need basic baking ingredients to whip up these cookies. Go raid your pantry to make sure you have everything and if you need to pop to the store, here’s your shopping list.
- Butter: You’ll use melted butter to whip up these cookies. It makes mixing easy and give them a perfect soft, chewy texture in the middle and buttery crunch on the edges.
- Light brown sugar: Brown sugar keeps your cookies soft and perfectly sweet with that classic carmel-y oatmeal cookie flavor.
- Egg yolk: Since we’re making two cookies you don’t need a whole egg. An egg yolk gives the dough richness and bind without getting cakey.
- Vanilla: Well duh! Just because this batch is small doesn’t mean you can skip out on the flavor.
- All-purpose flour: Regular all-purpose flour works great here! If you want even heartier cookies you can swap it out for whole wheat, or if you want to make these gluten free you can swap it out for a 1:1 gluten free baking flour!
- Old-fashioned oats: This recipe calls for old-fashioned oats for the best texture! Make sure you’re not using quick cooking oats or they won’t spread properly.
- Baking soda: Baking soda helps your cookies to spread and rise!
- Chocolate chips: Use whatever chocolate you love! Semisweet, dark, or even white chocolate would be delicious here. You can also swap the chocolate chips out for different stir-ins like raisins or nuts!
- A little cinnamon: Totally optional, but I love a touch of cinnamon in oatmeal cookies. It makes them taste extra cozy without turning them into a full on spice cookie.

Tips for the perfect oatmeal chocolate chip cookies
- Don’t overbake them: The key to a really good oatmeal chocolate chip cookie is taking them out of the oven before they look completely done. You want golden brown edges and soft centers. They’ll firm up as they cool.
- Use rolled oats: Old-fashioned rolled oats give these cookies the best chewy texture. Quick oats can work in a pinch, but they’ll give you a softer, less textured cookie.
- Press extra chocolate chips on top: This is purely aesthetic, but also absolutely necessary. Press a few extra chocolate chips into the tops of the dough balls before baking for those big pools of chocolate.
- Don’t skip the salt: A little salt balances the sweetness and makes the chocolate taste even more chocolatey. If you have flaky sea salt, sprinkle a tiny bit over the warm cookies when they come out of the oven.
