I think we can all agree that the best part about Valentine’s Day is the chocolate, so naturally brownies are on the v-day menu at chez Crawford. And this year we’re making these super fudgy red velvet cheesecake brownies to celebrate. They’re made with a decadent, red velvet brownie base and swirled with a luscious cheesecake batter. The result is truly magnificent.

And the best part is, you can find all of these ingredients at your local ALDI! When we’re baking for an occasion like Valentine’s Day, I want my grocery shopping to be a one-and-done deal. Does anyone enjoy hunting down the exact ingredients they need from multiple grocery stores?! I think not.

You can find each and every ingredient you’ll need for these festive red velvet cheesecake brownies along with all the Valentine’s Day necessities from cards to boxes of chocolate to heart shaped blocks of cheese (I KNOW) to heart shaped frozen pizzas and everything in between. So, in the spirit of love, let me just say that we LOVE ALDI because we can get each and every thing we need there, and can always count on it to be high quality and affordable!

So get yourself on over to your local ALDI, or schedule a delivery through Instacart or do curbside pick up! Here’s your shopping list:

  • Countryside Creamery Unsalted Butter: You’ll use melted butter to create a perfectly fudgy, buttery red velvet brownie. We recommend using unsalted butter so you can completely control how much salt is in your brownies!
  • Baker’s Corner Granulated Sugar: Granulated sugar will make your red velvet brownies perfectly soft and sweet.
  • Eggs: You’ll need eggs for both the brownie base and the cheesecake swirl. Make sure they’re at room temperature so they incorporate seamlessly into the batter!
  • Stonemill Pure Vanilla Extract: Vanilla extract is an absolute necessity for these red velvet cheesecake brownies! We love stocking up at ALDI because pure vanilla extract can be $$$. Luckily the Stonemill Pure Vanilla Extract is super affordable and makes delicious baked goods!
  • Salt: All baked goods need a little salt to offset all that sweetness.
  • Baker’s Corner All Purpose Flour: Regular ol’ all purpose flour will keep your brownies soft and tender!

  • Happy Farms Cream Cheese: Obviously you’ll need some cream cheese for your cheesecake brownies! Make sure you bring the cream cheese to true room temperature before baking to ensure a silky smooth, clump free cheesecake swirl.
  • Red Food Coloring: All red velvet needs a hearty dose of red food coloring! You’ll need a fair amount of it to get your red velvet brownies nice and saturated.

How to store red velvet cheesecake brownies so they stay fresh all week

It will come as no surprise that we often have a lot of leftover baked goods, so I have perfected the system of keeping them as fresh and tasty as can be for as long as possible. The best way to store these brownies is in a sealed, airtight container in the fridge in a single layer! Just make sure you cool them completely before storing to prevent any condensation! They should stay fresh in the fridge for up to 7 days! Enjoy!

Ingredients

For the red velvet brownies

  • 1/2 cup Countryside Creamery Unsalted Butter, melted
  • 1 cup Baker’s Corner Granulated Sugar
  • 2 eggs
  • 1 1/2 teaspoons red food coloring
  • 2 teaspoons Stonemill Pure Vanilla Extract
  • 1/2 teaspoon salt
  • 3/4 cup Baker’s Corner All Purpose Flour 3 Tablespoons Baker’s Corner Baking Cocoa

For the cream cheese swirl

  • 8 ounces Happy Farms Cream Cheese, room temperature
  • 1 egg yolk, room temperature
  • 1/3 cup Baker’s Corner Granulated Sugar

Instructions

    1. Preheat the oven to 350°F and line an 8 x 8 pan on all sides with parchment paper. Set aside.
    2. In a medium bowl combine the melted butter and granulated sugar. Whisk together until glossy.
    3. Add the eggs and whisk until it emulsifies and is slightly foamy, about 2 minutes. This will give you that nice crackly top.
    4. Add the vanilla extract and food coloring and stir to evenly distribute.
    5. Add the flour, cocoa powder and salt and mix until combined and no streaks of flour remain.
    6. Pour the batter into the prepared pan, spreading into an even layer.
    7. Next, make the cream cheese swirl. Combine all the ingredients in a mixing bowl and whisk together until smooth and creamy.
    8. Drop the cream cheese mixture in large dollops on top of the red velvet brownie batter. Use a butter knife to make big swirls.
    9. Bake for 30 to 35 minutes or until a knife inserted into the middle comes out clean. Allow to cool before slicing into 9 huge brownies or 16 smaller ones! Enjoy!

  1. Delicious. Cooked for 40 min. Could’ve pulled at 37-38. Cream cheese definitely needs to be room temp, but even if it’s a little lumpy, it’ll melt in the oven. It was really a party perfect recipe. Fudgy, great combo of red velvet/brownie/cheesecake. Very pleasant surprise. Will make again.






  2. I guess the 8×8 is a little too small because the cream cheese mixture for the next layer is quite alot maybe a bigger and slightly flatter baking tray would work better look wise. Great taste such an easy recipe.

  3. Great recipe but I had a similar issue as others with the cheesecake batter being super runny and I don’t think I used that big of an egg? Along with that my brownie batter turned out brown and just ended up looking like regular brownies more than red velvet, maybe I added too much cocoa powder but I followed with 3 tablespoons. Do you know where I might have went wrong?






    • Hi Hollie! What kind of food coloring did you use? My guess is that that’s the culprit–we used a professional red gel food coloring!
