What are almond joy brownies

I guess I should probably start with what almond joys are. You know…in case you live under a rock. I jest, I jest, but actually almond joys are one of absolute favorite candy bars, and I simply don’t think they get enough credit. They’re a fudgy, coconut pillow covered in a thin layer of chocolate and finished off with a crunchy, salted almond. They are divine.

So…what are almond joy brownies? They take all those same chocolate, coconut, almond flavors and pack them into a decadent brownie. These almond joy brownies consist of 3 decadent layers inspired by your favorite coconut-y almond joy:

Ingredients for almond joy brownies

Thanks to a brownie mix, this multilayered candy bar brownie isn’t all that complicated to grocery shop for. You’ll need just 8 ingredients–all of which you can scoop right up in your local grocery store’s baking aisle. Here’s what you’ll need:

  • A high quality brownie mix + all the fix-ins to make it
  • Almond Extract
  • Roasted almonds
  • Sweetened condensed milk
  • Shredded coconut
  • Powdered Sugar
  • Chocolate Chips
  • Cream

These brownies are decadent so you’ll probably want to eat them in like a dainty mouse in little slivers, going back for more every 10 minutes until they’re completely gone. Or at least that’s how I ate them. And because you’re not going to gobble them all up in one sitting, it’s a good idea to think ahead on how to store these bad boys.

These almond joy brownies stay fudgy for WEEKS if you store them correctly. After slicing the brownies up, store them in a single layer in an airtight container or a sealed plastic bag in the fridge.

Ingredients

  • 1 boxed brownie mix (prepared according to instructions)
  • 1/2 teaspoon almond extract
  • 1/2 cup roasted almonds, roughly chopped
  • 1 can sweetened condensed milk
  • 1/4 teaspoon salt
  • 1/4 cup powdered sugar
  • 3 cups unsweetened shredded coconut
  • 1 1/2 cups semisweet chocolate chips
  • 1/3 cup heavy cream

Instructions

    1. Preheat the oven to 350°F and line a 9 x 9 pan with parchment paper on all sides, leaving about a 2 inch overhang. Set aside.
    2. In a large mixing bowl, prepare your brownie mix according to directions. Stir in the almond extract and chopped almonds. Transfer the batter to your prepared pan, spreading into an even layer.
    3. Bake according to directions on the box, or until a toothpick inserted into the middle comes out mostly clean. Remove from the oven and allow to cool completely.
    4. While the brownies cool, make the coconut topping. Combined the sweetened condensed milk, coconut, powdered sugar, and salt in a large mixing bowl. Stir to combine until it forms a thick paste.
    5. Use a rubber spatula to smooth the coconut mixture over the brownies, spreading all the way to the edge into a flat, even layer. Place in the brownies in the fridge to set up for a half hour.
    6. Once the coconut layer feels firm, make the chocolate ganache. Place the cream in a microwave safe bowl and microwave until scalding, about 30 seconds. Add the chocolate chips to the cream and let sit for 5 minutes. After 5 minutes, use a fork or a whisk to stir together. The hot cream should have melted the chocolate, but if there are any clumps remaining, microwave in 15 second intervals, stirring in between each until smooth.
    7. Pour the ganache over the coconut layer and place in the fridge to set for at least a half hour or overnight.
    8. Once the ganache is set, top with chopped up almonds and use a thin, sharp knife to slice into 9 huge brownies, or 16 normal size brownies. Devour!
