From working at an ice cream parlor for 4 years, my milkshake skills are top notch. Stacking three scoop ice cream cones is a breeze. My forearm strength is that of an orangutan (because as any biological anthro major knows, they hang on branches by their arms). And I can eyeball the perfect amount of milk needed in a frappe (as we Bostonians call them) like it’s my job. Well, it was, so… yeah.
Milkshakes are one of my favorite treats in the warmer months. They’re delicious, and portable. Plus, there isn’t a bad flavor of milkshake. So instead of spending $8 on a milkshake at the hipster ice cream shop down the street, I suggest making your own milkshake at home. Because what’s better than rewarding yourself a gourmet homemade milkshake after a long day?
To get the perfect caramel flavor, I used Tate+Lyle® Gourmet Beverage Syrups, a blend of pure cane sugar and caramel flavor. Tate +Lyle® Gourmet Beverage Syrups come in a variety of flavors, including hazelnut and vanilla (perfect for my morning coffee, eh?). But as soon as I heard about the caramel syrup, I knew exactly what I wanted to do.
Tips on how to make the best milkshake
Making a milkshake is super simple — just toss the ingredients into a blender and blend. But there are a few key things to remember if you want to make the best homemade milkshake of your life.
Use whole milk — If you’re going to make a homemade caramel milkshake, you’ve gotta go all out. Use whole milk for the thickest, creamiest milkshake possible. And if whole milk is too much for you, at least go for 2%.
Buy real ice cream — I’m sorry, but the low-fat ice cream they sell at the grocery store isn’t real ice cream. Read the ingredients label on your pint of ice cream to make sure you’re getting the good stuff. Milk, cream, and sugar should be the main ingredients, and you don’t want any gnarly thickeners or stabilizers in there either.
Drizzle caramel sauce inside the glass — This step is totally optional, but it’ll really wow whoever you’re making a milkshake for. Drizzle a bit of caramel sauce down the sides of the glass and then pour the caramel milkshake in. The caramel along the sides will make your homemade milkshake look totally profesh.
Add a pinch of salt, if desired — If you wanted to really go for it, you could even mix salt into your caramel for a salted caramel milkshake. About 1/4 teaspoon would do. Cuz the only thing I like more than caramel… is salted caramel.

- Yield: 4 small or 2 large milkshakes
- 1 pint vanilla ice cream
- 3/4 cup whole milk
- 3 tablespoons Tate + Lyle® Caramel Pure Cane Syrup
- optional toppings:
- whipped cream
- rainbow sprinkles
- Drizzle caramel inside mason jars. Set aside.
- In a large blender, blend vanilla ice cream, whole milk, and Tate + Lyle® Caramel Pure Cane Syrup until smooth.
- Pour into mason jars, then top with more caramel, whipped cream, and rainbow sprinkles.
