Happy Monday, all! It’s time to spice up your morning. Meet this coconut blueberry layered smoothie.

While brunch is one of my favorite activities of all time, I’ve never been a huge fan of breakfast. My stomach isn’t always ready for eggs, toast, or cereal. It all feels heavy and leaves me lethargic.

But smoothies, on the other hand, are totally welcomed by my stomach. My tummy says “weee, gimme!” They just feel easy and nutritious.

This recipe is not only easy and nutritious, but also totally gorg. It’s the Gigi Hadid of smoothies.

It’s full of antioxidant-rich blueberries, filling almond butter, tasty coconut flakes, and protein-filled greek yogurt.

To create the layered effect, you absolutely must freeze the smoothie between layers. Trust me, I got eager and tried to pour my layers all at once. Let’s just say the result is not a layered smoothie.

In I’m-in-Europe news, I’m currently sitting in Ferrol, Spain after a wet but seriously enjoyable bike ride through town. Tomorrow we head to Gijon to explore the countryside and go on a cider tour. It’s been SO much fun so far, and I can’t wait to continue the exploration!

RECIPE

Blueberry Coconut Layered Smoothie

Serves 2 smoothies     adjust servings

Ingredients

For the bottom layer

  • 1/4 cup plain non-fat greek yogurt
  • 6 tablespoons coconut milk (from a carton-- like almond milk)
  • 1 cup frozen blueberries

For the middle layer

  • 1 banana
  • 1 cup plain non-fat greek yogurt
  • 1/2 cup frozen blueberries
  • 1/2 cup coconut milk
  • 2 tablespoons unsweetened shredded coconut

For the top layer

  • 1 banana
  • 6 ounces coconut cream
  • 2 tablespoons unsweetened shredded coconut
  • 1 tablespoon maple syrup or agave
  • handful fresh blueberries & coconut flakes, for topping

Instructions

  1. In a blender, combine all ingredients for bottom layer. Blend until smooth. Pour evenly into two 14 or 16 ounce glasses.
  2. Place glasses into freezer for at least 20 minutes to harden. If you don't do this, your smoothie layers will mush together.
  3. Once chilled, make your middle layer. In a blender, combine all ingredients for middle layer. Blend until smooth. Slowly pour over the bottom layer using a funnel.
  4. Place glasses into freezer for at least 15 minutes to harden.
  5. Once chilled, make your top layer. In a blender, combine all ingredients for top layer. Blend until smooth. Slowly pour over the middle layer using a funnel.
  6. Top smoothies with fresh blueberries and coconut flakes, then serve!

I think most of Europe is a bit soggy right now. I live in England and we’re definitely a bit wet! ???

These photos are simply beautiful! And I love this layered smoothie idea. While I LOVE breakfast foods, I’m rarely ready to eat them until later in the day. Smoothies (and coffee!) are a fabulous way to start the day. Love this! XO

What won me over was the helpful “coconut milk from a carton — like almond milk.” This makes you the winner of kindest blogger on the Interweb.

Thanks for the pretty and delicious recipe!
