A veggie sandwich bursting at the seams with herbed goat cheese, avocado, alfalfa, and more.
Ever since I can remember, sandwiches have been my favorite lunch. They tackle all the basic food needs- carbs (bread), fat (mayo & cheese), protein (typically honey smoked turkey, for me), and veggies (lettwice and tom toms).
Plus, I’m a fiend for chips, and what goes better together than a good turkey & cheese and a big bag of sour cream & onion chips?
In elementary school I had an obsession with these gigantic sub rolls. They must’ve been a foot long.
I asked my mom to make me one every day for the better part of a year. I have a vivid memory of one particular day in the lunchroom. I was sitting at a table on the far side of the cafeteria with my friends— the table right by eastern Africa on the huge world map mural.
I remember scarfing (like, literally scarfing because lunch was only 20 minutes and it took me the entire time to eat my football-sized sandwich) down my meal and promptly leaning back on my chair and going “oof.”
I was so full. Like uncomfortably full, but in the best way when you eat your favorite food and every bite was totally, utterly worth it.
To this day, you can find me eating sandwiches every day for lunch. I still believe there is nothing better as a mid-day meal.
This sandwich is nothing short of extraordinary. It starts with a great whole grain bread. You slather one side in herbed goat cheese, then layer on the greens. Avocado, green peppers, alfalfa sprouts, and cukes for crunch.
A drizzle of homemade green goddess dressing and you’re as good as gold.
I made 2 of these sandwiches one day and saved the second for another day. It was just as good 48 hours after, so plan on making a few for the week 🙂

But because sarahfennel was taken on snapchat (dumb) I wasn’t thinking and opted for two L’s instead of a number like a regular person).
For the yogurt dressing
- 3 tablespoons greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon rice vinegar
- 1 tablespoon chopped basil
- 1/4 teaspoon garlic powder
- salt and fresh ground pepper to taste
For the sandwiches
- 4 large slices 7-grain (or another whole grain) bread
- 4 ounces herbed goat cheese
- 1/2 cucumber
- 1 medium green pepper
- 1/2 cup alfalfa sprouts
- 1 medium avocado
- In a small bowl, whisk together all dressing ingredients. Set aside.
- Slice cucumber, green pepper, and avocado into strips.
- Spread half of the herbed goat cheese on one slice of bread. Layer slice with cucumbers, then green peppers, sprouts, a drizzle of the yogurt dressing, and finally avocado. Top with second slice of bread.
- Repeat with second sandwich.
