Apple Cider Donut Pancakes

Take all your favorite flavors of a cinnamon sugar coated apple cider donut and make it a pancake! These apple cider donut pancakes are spiced, sweet and perfect for Fall!

I know it’s a Monday, and (at least for me), these apple cider donut pancakes aren’t in the time schedule this morning, but boy do I wish they were how I was starting my morning. Perfectly spiced, light and fluffy, covered in that signature cinnamon sugar coating and finished off with a cinnamon glaze. YUM. I mean, I’m not going to be able to focus on anything all day, and you KNOW we’re having breakfast for dinner tonight 🙂

Plus I think pancakes for dinner is a little more acceptable than donuts (not that we really care).

What ingredients do you need to make apple cider donut pancakes?

Lucky for you, pancakes are one of the easier sweet treats to throw together on a whim. To make these Fall pancakes that taste exactly like an apple cider donut, you’ll need a few simple ingredients:

  • whole wheat or all purpose flour
  • baking powder
  • baking soda
  • eggs
  • apple cider
  • cinnamon
  •  granulated sugar
  • apples (optional for topping!)

I have almost all those things in my pantry, so the only excuse you can muster up for not making these delicious pancakes is not having apple cider. An easy fix, though, and well worth it!

Apple Cider vs Apple Juice:

Anyone who tries to tell you that apple cider and apple juice are the same is wrong. And apple cider is far superior to apple juice. You can quote me on that. While there are a lot of rumors floating around about the difference between apple cider and apple juice, it comes down to the way they’re processed. Both are made from apples (duh), however apple cider is generally not filtered to remove sediment and it is not pasteurized. This is why you generally find your apple cider at a local apple picking farm or seasonally in the the refrigerated section of the grocery store. On the other hand, apple juice, which is filtered and pasteurized stays fresh for ages and the clear, light colored juice can be found on a shelf year round.

For these apple cider pancakes you’ll definitely want to use cider!

Ingredients

for the apple cider donut pancakes

  • 3 tablespoons granulated sugar
  • 2 eggs, room temperature
  • 1 3/4 cup apple cider
  • 3 tablespoons unsalted butter, melted
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 3/4 teaspoon salt

for the cinnamon sugar coating

  • 1 cup granulated sugar
  • 2 tablespoons cinnamon

for the cooked apples

  • 2 large apples (any kind!), cored and peeled and chopped up
  • 2 teaspoons cinnamon
  • 1 tablespoons granulated sugar

Instructions

    1. In a medium bowl combine eggs, melted butter, apple cider, and sugar whisking until combined.
    2. In a separate bowl, sift the flour, baking powder, baking soda, cinnamon and salt together. Incorporate into wet ingredients, stirring only until combined. Let the batter sit for ten minutes to thicken.
    3. While the batter thickens, cook the chopped apples, cinnamon, and sugar over medium heat, stirring frequently until the apples are soft and tender. Set aside.
    4. In a small bowl, prep the cinnamon sugar, combining the sugar and cinnamon. Transfer to a large shallow bowl or to a plate.
    5. When you are ready to cook your pancakes, heat a large skillet or griddle on medium heat.
    6. Once griddle is hot, liberally grease with oil or butter (about 1 tablespoon per 3 pancakes). Pour ¼ cup of batter per pancake onto surface. Cook on one side until holes form around edges, about 2 minutes, then flip and cook on other side for additional 1-2 minutes. Don’t let the pan get too hot– you want a nice, even heat.
    7. Place each hot pancake in the cinnamon sugar, flipping over to coat the other side. Repeat with the remaining batter.
    8. Serve with a simple powdered sugar glaze, cooked apples, and a healthy dose of maple syrup! The options are endless!

  1. I loved this recipe. Skipped the cinnamon sugar coating but otherwise followed the recipe. I will definitely make these again. Super easy. Light and fluffy. Thanks for sharing this recipe with everyone.

  2. Oh man, I thought these terrible and I was not sure why.. until I finally noticed this calls for apple cider (not apple cider vinegar)! Minus my mistake and I’m sure these taste much better.
