It’s officially fall baking season, which means it’s time to soak up alllllll the cozy, spiced, delightful flavors of the autumn season. And obviously apple is going to be high on that list. These apple crumble muffins are loaded up with juicy apple pieces, lots of cinnamon, and are topped with a buttery, crunchy, streusel topping. Finish them off with a drizzle of vanilla glaze and you’re in for a tasty start to the day.

What are apple crumble muffins?

These apple crumble muffins are supremely soft, moist and fluffy and finished off with the most decadent, tasty streusel topping that really pushes them over the edge. They’re made with our favorite tender muffin base with the welcome addition of juicy apple pieces and fall spices. The result is simply *chef’s kiss.*

What ingredients do you need to make these fall muffins?

You’ll need simple, pantry staples to make these apple crumble muffins, so it’s important to use the best high quality ingredients!

How to make sure your apple crumble muffins get big, fluffy muffin tops

I LOVE muffins, but the thing about muffins is that a good muffin is GREAT, but a mediocre muffin is pretty bleh. So how do you get one of those big, fluffy, moist, bakery style apple muffins?

Luckily we have all the tips for you to make perfect apple muffins:

  • Use milk AND Greek yogurt: The combination of thick, creamy yogurt and tangy milk will create the perfect rise and brightness in these apple muffins! If you don’t have Greek yogurt on hand, I’ve also had success making these with plain yogurt.
  • Don’t over mix the batter: Over mixing your batter can produce dense, dry muffins. To preserve that moist, tender crumb you’re looking for in homemade muffins, fold the batter together until just combined!
  • Bake at a higher temperature for 5 minutes and then lower it: Baking your muffins for a few minutes at a higher temperature will give the baking powder a little extra oompf so they get that nice, domed top and rise up. After 5 minutes, lower the heat so that the muffins don’t burn.

How to store apple crumble muffins

This recipe will make 12 standard muffins, which can be a lot to get through if you’re not sharing with friends or family! We recommend storing these muffins in an airtight container or plastic bag in the fridge. So they don’t get soggy at room temperature or dry out if exposed to the air.

The other good news is that these muffins are freezer friendly! Make sure to let the muffins cool completely before placing in a freezer safe plastic bag or container to prevent condensation from forming. They will freeze well for up to 3 months!

Ingredients

For the muffins

  • 1/2 cup Simply Nature Unsalted Organic Butter, melted
  • 1 cup Simply Nature Organic Cane Sugar
  • 1/4 cup Simply Nature Organic Light Brown Suga
  • 2 eggs, room temperature
  • 1 teaspoon Stonemill Pure Vanilla Extract
  • 6 Tablespoons Simply Nature Organic Whole Milk Greek Yogurt Plain
  • 6 Tablespoons milk
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 cups Baker’s Corner All Purpose Flour
  • 2 teaspoons Stonemill Ground Cinnamon
  • 1/4 teaspoon Ground Nutmeg
  • 1/4 teaspoon Ground Ginger
  • 1 apple, peeled and chopped

For the crumb topping

  • 1/4 cup Simply Nature Organic Unsalted Butter, melted
  • 1/4 cup Simply Nature Organic Cane Sugar
  • 1/4 cup Simply Nature Organic Light Brown Sugar
  • 2/3 cup Baker’s Corner All Purpose Flour

For the vanilla glaze (optional)

  • 1 cup powdered sugar
  • 2 Tablespoons milk
  • 1 teaspoon Stonemill Pure Vanilla Extract
  • Pinch of salt

Instructions

    1. Preheat oven to 425°F. Grease 12 standard size muffin tins and line with cupcake liners. Set aside.
    2. In a small mixing bowl, combine all the ingredients for the streusel, using a fork or a pastry cutter to stir together until the mixture resembles wet sand.
    3. In a large mixing bowl combine the melted butter and sugars, beating until combined. Add the eggs in one at a time. Add the Greek yogurt, milk and vanilla extract.
    4. Add the flour, baking powder, spices and salt. Mix until it begins to come together (not fully incorporated). Add the apple pieces and use a rubber spatula to fold everything together. Batter will be thick.
    5. Scoop batter into prepared muffin tins, filling about 3/4 of the way. You can use a large cookie scoop or a 1/4 cup measure to keep things consistent.
    6. Sprinkle the tops of each muffin with about 1 Tablespoon of the streusel mixture, pressing the streusel gently into the batter so it sticks.
    7. Bake for 5 minutes at 425°F, then turn oven down to 375°F and bake for an additional 15 minutes, until muffins are golden brown and spring back to the touch.
    8. If desired, make the frosting while the muffins bake. Combine all the ingredients for the icing in a bowl and mix together until smooth and creamy.
    9. Remove the muffins from the oven and allow to cool completely before drizzling with icing and eating!

  1. I didn’t have a muffin pan where I was staying for the holiday so I put it in a 8×8 pan. Cooked it a little too long so the bottom was too well done ( an extra 10 min at 375 degrees over the muffins would have been perfect). Still it was delicious.

  3. These came out so fluffy and delicious. I personally think the addition of the icing made them too sweet, the muffin is sweet enough with the streusel!
