These bite sized birthday cake truffles take all your favorite flavors of a classic funfetti cake and roll them it up in white chocolate, birthday crumb coating that will make your tastebuds happy. They’re perfectly sweet, moist on the inside, crunchy on the outside, and dangerously pop-able. Inspired by the famous birthday cake truffles from Milkbar (which are unfortunately incredibly delicious and pricey), we decided to whip up a homemade recipe for these so you can make them from the comfort of your home for a fraction of the cost! Plus, these b-day cake babies are not only delicious, but also super easy to make!

What are birthday cake truffles?

Birthday cake truffles are essentially a cake pop sans the stick. If you’d never had a cake truffle and you’re thinking, what the heck are those? allow me to explain. Cake truffles are made with a baked cake that is crumbled up and rolled into balls and then dipped in some sort of coating. You let the coating harden and then you can keep them in the fridge (or even the freezer if you want to save some for later) and serve them to a crowd, box them up into a cute box as a gift, or pop them straight from the fridge like a gremlin like I do :).

But in all seriousness these funfetti cake truffles are such a good sweet for a party or celebration because they come together quickly with minimal skill and are super easily transported. And EVERYONE I make these for falls in love with them, so you can rest assured they are super crowd pleasing.

Ingredients for homemade birthday cake truffles

You don’t need a million ingredients to make these homemade birthday cake truffles, so make sure the ingredients you are using are of top notch quality. This will produce gourmet tasting birthday cake truffles!

  • 9 x 13-inch funfetti cake: You can make this from a cake mix, buy it from a store, or if you’re feeling up for it and want these to taste seriously gourmet you can make a homemade funfetti cake.
  • Milk: Some cake truffle recipes use frosting to bind your cake crumbs together, but we find that leads to a super sweet truffle. As long as you use a good cake, milk will provide plenty of moisture to give your truffles a velvety, tender crumb!
  • Vanilla Extract + Almond Extract: A combination of vanilla extract and almond extract will give you that classic vanilla taste that bakeries use!
  • Granulated Sugar + Brown Sugar: To make the birthday cake crumb you’ll roll these birthday cake truffles in, you’ll need to whip up a sandy crumb topping, which of course needs to be perfectly sweet. We used a combination of brown sugar and white sugar, so you get the deep flavor and moisture of brown sugar along with the crunch that granulated sugar will give you!
  • All Purpose Flour: You’ll need all-purpose flour to give you the perfect birthday cake flavor in your funfetti crumb!
  • Baking Powder: You don’t technically need the baking powder in your birthday cake crumb, but it does give a little tang to your crumb that will make it taste even more like b-day cake batter.
  • Salt: All sweet treats need a little salt to offset any sweetness, and I’m sure you aren’t surprised to hear that these birthday cake truffles are pretty sugary.
  • Rainbow Sprinkles: WELL DUH. It’s not a birthday cake truffle with an aggressive amount of sprinkles. I like to use rainbow sprinkles to keep these classic, but if you’re making them for a special or themed occasion you can use whatever kind of sprinkle you prefer. You get to decide what the fun is in funfetti.
  • White Chocolate: You’ll coat eat of these birthday cake truffles in a thin coating of white chocolate to act at the glue for your birthday cake crumb.
  • Coconut Oil: White chocolate can be pretty thick when melted, so we like to use coconut oil to thin it out and make it easier to work with!

Our tips for making perfect b-day cake truffles every time

These birthday cake truffles couldn’t be easier to make, but these few pro tips will guarantee you perfect truffles every time!

  • Use a high quality cake as the base for your truffles: The key to making delicious birthday cake truffles is to start with a cake that is moist and flavorful. You can use a store-bought cake mix or make your own from scratch.
  • Underbake your cake slightly
  • Don’t cheap out on the white chocolate: The chocolate coating is one of the first flavors that will hit your tastebuds when you sink your teeth into one of these birthday cake truffles. Use a high-quality chocolate like Ghirardelli or Guittard for the best results.
  • Be careful when melting your white chocolate: White chocolate can seize up and get chalky and sad if you heat it up for too long or at too high of a temperature, so be sure to really stir your white chocolate in between microwaving!

Ingredients

for the funfetti cake truffle

  • 1 9 x 13-inch funfetti cake prepared according to package directions
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract

for the birthday cake coating

  • 3 tablespoons light brown sugar, packed
  • 3 tablespoons granulated sugar
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons rainbow sprinkles
  • 3 tablespoons oil or melted butter
  • 1 teaspoon vanilla extract
  • 2 cups white chocolate
  • 1 tablespoon coconut oil

Instructions

    1. Prepare the funfetti cake according to directions and bake off in a 9 x 13-inch pan. Be sure to underbake it slightly so that your truffles are super moist. Allow the cake to cool completely.
    2. Once the cake is completely cool, use your hands to break it into small pieces into a large bowl. Add the milk, vanilla, and almond extract and use your hands or a wooden spoon to mix everything together until the cake clumps together. If your cake is dry you might need an extra tablespoon of milk.
    3. Use a 1 ounce cookie scoop to scoop out truffles, rolling them into smooth balls. Cover and place in the fridge until ready to to assemble.
    4. Next, make the birthday cake coating. Preheat the oven to 325°F and line a baking sheet with parchment paper.
    5. Combine the sugar, flour, baking powder, and salt in a small bowl and stir to combine. Make a well in the center and add the oil or melted butter and vanilla extract. Stir together until the mixture starts to clump together and get sandy. Add the sprinkles and stir to combine.
    6. Spread the mixture out onto your prepared baking sheet into an even layer and bake for 15 minutes, stirring gently at the halfway point. Transfer to a small bowl to cool completely.
    7. When ready to assemble, combine the white chocolate and coconut oil in a microwave safe bowl and microwave in 15 second increments, stirring in between each, repeating until smooth and fully melted.
    8. Dip each truffles in the white chocolate and then roll in the funfetti crumb to full coat each truffle. Place on a plate to set completely before serving!
