I think we can all agree that there are few things tastier than a classic peanut butter cookie. Now imagine if you took the best part of a salty sweet peanut butter cookie (the gooey center) and enveloped it in a buttery, flaky pie crust. I KNOW. This decadent peanut butter cookie pie combines all the best parts of pie and cookie to make the ultimate treat.

Oh, and it’s loaded up with chocolate chips. Obviously.

What is a peanut butter cookie pie and why is it the best pie ever?

With a name like peanut butter chocolate chip cookie pie you can probably tell this is going to be delicious. I mean, what is not to like about a flaky, butter pie crust with a peanut butter cookie filling that? It’s buttery, sweet, crunchy, chewy, chocolatey…I could go on, but I’m already drooling so I’ll stop. It comes together in a pinch thanks to the Belmont Deep Dish Pie Crust from ALDI and packs all the flavor of a warm pb chocolate chip cookie without having to individually scoop out a whole bunch of cookies. It’s also freezer friendly and keeps in the fridge for up to 5 days, so you can prep it ahead if you need to!

AKA the perfect pie to make for your Thanksgiving feast.

Ingredients for peanut butter cookie pie

You’ll love these muffins because you’ll need simple pantry staples and they’re easily tweaked to your favorite stir-ins! Because the recipe is so simple it is so important to use the best high-quality ingredients, so be sure to stock up on the good stuff when you’re grocery shopping.

You can shop in stores, through Instacart for delivery or do curbside pickup! Whatever way you choose to shop, make sure to grab some cute gear to deck yourself out in while you’re grabbing your groceries:

  • Belmont Deep Dish Pie Crust: This premade pie crust makes baking a homemade pie so stress free. I like to keep at least 4 in the freezer at all times during the holiday season for emergency pie baking.
  • Peanut Butter: Obviously peanut butter is the star of this salty-sweet pie! We used Simply Nature Creamy Peanut Butter, but any kind works here! You can also use a crunchy peanut butter if you prefer it!
  • Butter: You’ll need just ¼ cup of melted butter for the cookie pie! We prefer to use melted butter because it will give your peanut butter filling
  • Bakers’ Corner Light Brown Sugar: Brown sugar keeps you peanut butter cookie filling soft and chewy–just like a peanut butter cookie!
  • Granulated Sugar: A little granulated sugar will give your pie a slight crunch and crystallization on top so you get a little extra texture in there.
  • Eggs: Two eggs will give your peanut butter cookie filling the perfect structure and rise to keep the cookie filling fudgy without being too dense!
  • Baker’s Corner All Purpose Flour: A little all purpose flour will help to bind your peanut butter cookie together!
  • Stonemill Pure Vanilla Extract: Vanilla extract is a staple ingredient in most homemade baked goods for a reason. It really brings a delicious, nuanced flavor to all your sweet treats.
  • Salt: All sweet treats need a little salt to offset any overpowering sweetness.

This peanut butter cookie pie is as easy as, well….pie. Sorry I had to. In all honesty though this pie is SO easy to throw together, but tastes like it took way longer.

  • Don’t over mix the batter: Over mixing will cause more gluten bonds to form in your batter which sadly leads to a tougher, breadier muffin–not what we want. To ensure you get that nice tender, melt in your mouth crumb, fold the batter together until just combined!
  • Don’t skimp on the vanilla extract: The vanilla extract goes a long way in elevating the flavors in this salty-sweet pie. If it’s in your budget I highly recommend using a pure vanilla extract–it will make your pie taste seriously gourmet!
  • Let the pie set before eating: I know you’ll be tempted to dive into your pie as soon as its out of the oven, but its so much better once you wait and let the gooey, peanut butter filling set!

Ingredients

  • 1 Belmont Deep Dish Pie Crust
  • 2 large eggs, at room temperature
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 3/4 cup peanut butter
  • 1/4 cup unsalted butter, melted
  • 2 teaspoons Stonemill Pure Vanilla Extract
  • 1/2 cup Bakers’ Corner All Purpose Flour
  • 1/2 teaspoon salt
  • 1 1/2 cups semisweet chocolate chips

Instructions

    1. Preheat the oven to 350°F and place the Belmont Deep Dish Pie Crust on a cookie sheet. Set aside.
    2. In a stand mixer fitted with the whisk attachment, combine the eggs, brown sugar, and granulated sugar.
    3. Beat on medium speed until light and fluffy and pale yellow in color, about 2 minutes.
    4. Add the peanut butter, melted butter, and vanilla extract and beat on medium speed until smooth and combined, about 30 seconds.
    5. Add the flour and salt and mix to combine. Last, add the chocolate chips, using a silicone spatula to fold into the batter.
    6. Spoon the peanut butter cookie batter into the pie crust, spreading into an even layer.
    7. Bake until the pie is golden brown all over and only wiggles slightly in the center when you jostle the pan, 30 to 45 minutes.
    8. Let the pie cool for at least 1 hour before slicing and serving!

  2. If you do put the finished pie in the fridge to bring to thanksgiving, what temperature and for how long do you suggest to warm it back up to serve? Also do you have a recipe for the frosting looking dollops on the top of the pie?

    • Hi Stephanie! I would stick it back in a 350°F oven for 15 minutes! We just topped it with whipped cream, but it’s totally optional!
