What do you need to make this perfect pumpkin loaf

I don’t know about you guys, but I spent a lot of time baking in the fall. I feel like I’m at the grocery store every day soaking up all those scrumptious, spiced fall flavors. So while this cream cheese swirl pumpkin bread calls for a fair amount of ingredients you can scoop them up at your local ALDI in store, through curbside pickup or get them delivered via Instacart super easily. Here’s what you’ll need:

How to get a silky smooth, dreamy cream cheese swirl

Unfortunately, I think many of us have had a chunky cheesecake in our lifetime. And quite frankly, it’s 2021–we don’t need to be dealing with chunky cream cheese swirls. Luckily, I’ve tested this recipe to the ends of the earth so I know exactly how to get a smoooooooth cream cheese swirl that perfectly complements your super moist pumpkin bread.

  • ​​Make sure the cream cheese and eggs are room temperature: I cannot stress how important this is. The cream cheese and egg must be at TRUE room temperature in order to beat together into a creamy, clump-free cheesecake swirl. When your ingredients are all the same, soft temperature you won’t have to beat your batter for as long, which means less air in your batter, which means a creamier cream cheese swirl. I recommend leaving your ingredients out on the counter for at least 2 hours. I usually do it overnight.
  • Do not over beat the cream cheese swirl: Over beating the cream cheese batter will cause air bubbles which can give your cream cheese swirl an odd consistency. Only mix the batter until no lumps remain.
  • Don’t overswirl the batter: When it comes to swirled desserts it’s easy to get carried away. And look–I get it. Swirling is fun! But don’t get carried away! Make a few big swirls and then stop. This will give you that nice defined ribbon with just a hint of marbling!

Ingredients

For the pumpkin bread

  • 1 1/2 cups Baker’s Corner All Purpose Flour
  • 3/4 cups Baker’s Corner Granulated Sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon Stonemill Ground Nutmeg
  • 2 teaspoons Stonemill Ground Cinnamon
  • 1/2 teaspoon cloves
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cup Baker’s Corner 100% Pure Canned Pumpkin
  • 1/3 cup milk
  • 1/2 cup canola (or vegetable) oil

For the cream cheese swirl

  • 8 ounces Happy Farms Cream Cheese, room temperature
  • 1/4 cup granulated sugar
  • 1 egg, room temperature
  • 2 Tablespoons Baker’s Corner All Purpose Flour
  • 1 teaspoon vanilla extract

Instructions

    1. Preheat the oven to 350°F. In a large bowl, mix together flour, sugar, baking soda & powder, salt, nutmeg, cinnamon, and cloves until combined.
    2. Make a well in the center of your dry ingredients. Pour in eggs, oil, milk, vanilla, and pumpkin puree.
    3. Whisk together the wet ingredients for about 30 seconds, then fold them into the dry ingredients until just combined.
    4. Line a 1 lb loaf pan with parchment paper on all side. Pour half of the batter into the loaf pan. Set the remaining batter aside.
    5. In a clean bowl beat together the cream cheese, sugar, egg, flour, and vanilla until creamy. Do not over mix.
    6. Pour the cream cheese mixture over the pumpkin batter in the loaf pan. Pour the rest of the pumpkin bread batter over the cream cheese.
    7. Use a butter knife to swirl the cream cheese and pumpkin together. Do not overswirl–you want thick ribbons of cream cheese.
    8. Bake at 350°F for 45 minutes or until a knife inserted into the middle comes out mostly clean. Allow to cool completely before slicing and serving!

    • So happy you enjoyed this bread! And sorry to hear your bake time was different–ovens can vary SO much so my guess is your oven just runs a little cooler than ours! Also if you use a clear pan rather than a metal pan it can take longer to cook!

  1. So good and so easy to make!! The flavors are perfect and the cream cheese swirl takes it to the next level. Only odd thing, I had to bake it about 25 minutes longer than the recipe suggests.
