Which means you simply have to make these fudgy homemade brownie LOADED up with chopped up peanut butter cups. They will satisfy alllll your pb + chocolate cravings with a 1:1 brownie to peanut butter cup ratio and the result is truly incredible. Plus, they are super easy to make–1 bowl! 8 ingredients! While throwing together a boxed mix of brownies is obviously the easiest way to whip up brownies, homemade brownies are *so* worth the extra effort. And this homemade brownie recipe is surprisingly very easy to make. You’ll need just 8 ingredients and one large microwave safe bowl. No fancy kitchen mixers or crazy techniques AKA the best kind of recipe. Here’s your grocery list.

Luckily for you I’ve made these peanut butter cup brownies a concerning amount of times 🙂 What can I say? I just can’t get enough of them. This does mean that I am somewhat of a Reese’s brownies expert, so have allllll the tips and tricks for you.
Use high quality cocoa powder: This is the most important one. Cocoa powder will truly make or break homemade brownies, so it’s very important to use a high quality, Dutch processed cocoa for the best results. I LOVE Rodelle’s and simply refuse to bake with anything else.
Mix the butter, sugar, and eggs until pale: This is the key to crackly top brownies. I don’t know why more people don’t talk about it because it shouldn’t be a secret. Everyone should have brownies that beautiful glossy, crackly finish and the best way to guarantee it is to vigorously whisk your eggs, butter, and sugar until they are frothy and paler in color.
Don’t over mix the batter once you’ve added the flour: We’re here to talk about the overmixing to dry brownie pipeline. When you overmix your batter, you cause more gluten to develop in your batter AKA bonds that will make your batter tougher and more bready–which is not what we want for a fudgy, gooey brownie. Once you’ve added the dry ingredients only mix your batter until no streaks of flour remain!
Do I have to make homemade brownies for these reese’s brownies?
Okay, so hear me out. I am not one to judge a brownie mix…especially when it’s a good brownie mix (like the Ghiaradelli one, which might actually be my dessert island food). So, yes, my fellow lazy friends, you can just whip up a brownie mix and load it up with Reese’s cups if you don’t feel like making homemade brownies. HOWEVER…I truly do think a homemade brownie is a magical confection and it really makes for the best bakery style peanut butter cup brownie, so if you are able I recommend going homemade!

Preheat oven to 350°F. Grease and line a 8″x 8″ pan with parchment paper and set aside.
In a large microwave-safe bowl, combine butter and sugar. Microwave for 30 seconds, then remove and stir with a whisk. Repeat process 2 more times. Though granules of sugar will remain, the goal is to get the mixture to a glossy finish.
Allow mixture to cool slightly, then add in eggs one at a time, whisking in between each addition. Whisk until the mixture lightens in color slightly.
Add in cocoa powder, salt, and vanilla extract. Fold in flour until just combined. Last, fold in the peanut butter cups.
Pour mixture into prepared baking pan and bake for roughly 35 minutes, testing for doneness by inserting a knife into the center of the brownies beginning at 30 minutes. You’ll know they’re done when the edge is set, but a knife inserted into the middle still comes out with a bit of brownie batter on it. It might take up to 55 minutes for them to cook through depending on your oven!

Notes
Make sure you’re using a high quality cocoa powder! We usually make these with Rodelle’s Dutch processed cocoa powder, but I have also used natural cocoa and other brands. I prefer to use Dutch processed as it has a smoother, deeper flavor, but natural will also work if it’s all you have on hand.
Be careful not to over bake your brownies. When you insert a knife into the middle you’ll want it to come out a little gooey as the brownies will continue to bake as they cool.
