No one wants to light their oven or slave over the stove when the sun is shining and the pool is calling. These super fudgy no bake s’mores bars are studded with airy marshmallows, and crisp graham crackers, making them the perfect last minute treat to throw together when you’re in a pinch. It’s made in one bowl, calls for 8 ingredients and the only kitchen gadget you’ll need is a microwave!
Ingredients for S’mores Bars
These fudgy s’mores bars come together in less than 10 minutes with only 8 ingredients. Pop them in the fridge for a few hours and you’ll be feasting on fudge in no time. So, here’s your grocery list:
Evaporated milk: Evaporated milk is shelf stable canned milk. As the name implies, about half of the liquid you would find in normal milk has been evaporated off! Make sure you’re using evaporated milk and NOT sweetened condensed milk, which has added sugar!
Karo® Light Corn Syrup: Karo® Light Corn Syrup is a nonnegotiable ingredient in this no bake fudge. It provides sweetness AND a smooth texture, making it the perfect base for these fudgy no bake bars!
Semi Sweet Chocolate Chips: Obviously you need chocolate in fudge! Make sure you’re using semisweet or dark chocolate chips to prevent your fudge from being too sweet!
Powdered Sugar: A little powdered sugar will firm up and sweeten your no bake bars to get them to that perfect rich, melt in your mouth consistency!

When we set out to make a no bake fudge recipe, we wanted it to be as approachable and painless as possible. I don’t know about you, but I’m not trying to whip out a candy thermometer and risk second degree burns when I’m trying to throw together a quick and easy no bake dessert.
That’s where Karo® Light Corn Syrup comes in. It’s the secret ingredient in this decadent and creamy homemade fudge. We love baking with Karo® Corn Syrup because it gives just enough sweetness, meaning all those other tasty s’mores flavors can shine through. Most importantly, corn syrup provides sweetness AND moisture to make the silkiest, melt in your mouth fudge you’ll ever have.
So let’s break it down step by step:
1. Combine the Karo® Light Corn Syrup and Evaporated Milk in a large microwave safe bowl. Microwave on high for 2 ½ minutes.2. Stir in the chocolate chips until completely melted.3. Add the powdered sugar, salt, and vanilla extract and mix until combined. The mixture will be glossy!4. Last, carefully fold in the graham cracker pieces and marshmallows until evenly distributed.5. Press the homemade fudge into a 9 x 9 pan lined with parchment paper on all sides. Chill the fudge for 2 hours or overnight to set!

1/2 cup Karo® Light Corn Syrup 1/3 cup evaporated milk 3 cups semi-sweet chocolate chips 1/2 cup powdered sugar 1/2 teaspoon salt 2 teaspoons pure vanilla extract 1/2 cup mini marshmallows 1/2 cup crumbled graham crackers (about 6 sheets)
Line a 9 x 9 pan with parchment paper on all sides. Set aside.
In a large microwave safe bowl, combine the Karo® Light Corn Syrup and evaporated milk. Mix will to combine. Microwave on high for 2 minutes and 30 seconds.
Remove the bowl from the microwave and stir in the chocolate chips until completely melted. If the chocolate does not fully melt, microwave the mixture for another 30 seconds to warm it up.
Add the vanilla, salt, and powdered sugar mixing until completely combined. The fudge will be shiny, but this will go away once it has set!
Fold in the mini marshmallows and graham cracker pieces. Do not over mix. Transfer the fudge to your prepared pan and spread into an even layer. Top with more marshmallows and graham cracker pieces if desired!
Place in the fridge for at least 2 hours to set! When ready to serve, use a clean sharp knife to slice the fudge. Enjoy!
