OH LET ME TELL YOU. I don’t think I’ve ever been so excited for an ice cream. This ice cream takes all the flavors of blueberry pie and stirs them into a creamy, dreamy vanilla ice cream. Made with a rich vanilla base, flaky pie pieces for the perfect crunch, and thick swirls of blueberry preserves…I mean I am drooling.

If that mouthwatering description wasn’t enough to convince you, this ice cream is also ridiculously easy to make. I’m talking 10 minutes prep time for some fancy $15 ice cream shoppe flavor, except the WHOLE batch of ice cream costs less to make thanks to ALDI’s low prices. You’ll need just 6 simple ingredients and a stand mixer (or a strong arm for whipping cream). That’s right. NO ICE CREAM MACHINE. It’s pretty much as easy as it gets.

As soon as summer rolls around, I pretty much become an ice cream monster. I want it every single day after every single meal, and of course I want it to be delicious, high quality ice cream. But going out for ice cream can get a little pricey. Plus it’s silly to go out for ice cream when you get all that ice cream shoppe flavor for a fraction of the cost at home. We grab all the ingredients for this no churn ice cream (along with all the other summer essentials we need) at ALDI. You can’t beat their prices and the quality of their products are always top notch.

Plus, I love to stroll through the air conditioned grocery store on a hot summer day as a fun outing. Or if you don’t feel like leaving the pool, you can order through Instacart for delivery or do curbside pickup. Whatever way you choose to shop, here’s your grocery list:

    • Friendly Farms Heavy Whipping Cream: The base of this creamy blueberry pie  ice cream is heavy whipping cream. It will beat up into a thick, dreamy whipped cream that will morph into a decadent no churn ice cream.
    • Baker’s Corner Sweetened Condensed Milk: Now if heavy cream is the key to that thick, decadent texture, sweetened condensed milk is the key to a smoooooth no churn ice cream that won’t crystalize.

How to make no churn blueberry pie ice cream

This may come as a surprise to you, but you do NOT need an ice cream machine to make ice cream. I used to never make homemade ice cream because I thought it was intimidating, but once you discover this magical no churn ice cream recipe there’s no going back!

  1. Whip heavy cream until it forms soft peaks.
  2. Gently fold in the sweetened condensed milk, salt, and vanilla extract.
  3. Fold in the pie crust pieces and swirl in the blueberry preserves.
  4. Pour the ice cream into a pan.
  5. Freeze overnight.
  6. Enjoy!

Even the simplest of recipes have some tricks to get truly perfect results every single time. These 3 tips will ensure you have creamy, dreamy gourmet ice cream that tastes worthy of a waffle cone.

  1. Use high-quality ingredients: With simple recipes the quality of your ingredients is SO important. And lucky for you, you can get tons of great ingredients at affordable prices at ALDI, so you don’t have to break the bank on your no churn ice cream.
  2. Don’t overbeat the whipped cream: The key to creamy ice cream sans ice cream machine is only beating the cream until *soft* peaks form. If you over beat the ice cream, you will beat too much air into it and as it freezes those air bubbles will cause the ice cream to break apart.
  3. Don’t overswirl your ice cream: To get those beautiful, big ribbons of jam and fat chunks of buttery pie crust, you only need to swirl your mix-ins a few times. Otherwise the jam will mix in too much and the pie crust will turn into really fine crumbs

Ingredients

  • 1 premade Bake House Creations Pie Crust, baked and crumbled into pieces*
  • 2 cups Friendly Farms Heavy Whipping Cream
  • 1 tablespoon Stonemill Pure Vanilla Extract
  • 14 ounces Baker’s Corner Sweetened Condensed Milk
  • 1/2 teaspoon salt
  • 1/3 cup Simply Nature Organic Blueberry Preserves

Instructions

    1. Line a standard size loaf pan with parchment paper and set aside. In a mixing bowl with a whisk attachment, whip the heavy cream until soft peaks form. Fold in the vanilla extract and salt.
    2. Pour the sweetened condensed milk on top of the cream and fold gently until everything comes together. Fold in the pie crust pieces.
    3. Carefully scoop half of the ice cream into the prepared loaf pan. Spoon half of the jam onto the ice cream in concentrated pools. Take a knife and make large swirls to incorporate the jam. Then, spoon the rest of the ice cream on top, and repeat with the remaining jam.
    4. Freeze for at least 12 hours before serving!

Notes

  1. You can bake off the pie crust at any time! I like to just lay it flat on a baking sheet and bake at 375°F for about 20 minutes or until golden brown! Allow the crust to cool and then roughly chop or crumble into pieces. You can keep the pieces in an airtight container until ready to use!
