Buckle up, babies, we’ve got a good one for you today. And it involves all your favorite flavors: marshmallows, chocolate, graham crackers, and… drumroll please… PEANUT BUTTER. Am I the only one that always puts a healthy smear of peanut butter on their s’more? If you’ve never tried it before, you’re seriously missing out. It’s the perfect salty sweet complement to that sugary s’mores flavor. Honestly, it’s probably top 3 flavor combos for me, and I can’t believe it’s taken us this long to whip up these scrumptious s’mores bars.

These peanut butter s’mores bars are made with a fudgy peanut butter cookie base that’s loaded with marshmallows, chocolate and graham crackers. They’re full of toasty, gooey, marshmallowy, nutty goodness and you’re going to love them.
Plus they’re made in a bowl with just 11 ingredients.

These peanut butter s’mores bars come together in a pinch with all your favorite s’mores ingredients loaded right into the batter. Here’s what you’ll need:
Butter
Peanut Butter
Brown Sugar
Eggs
Vanilla Extract
Baking Soda

All Purpose Flour
Chocolate
Marshmallows

Tips for the best peanut butter s’mores bars
Use high quality ingredients: If you were making a regular ol’ s’more you’d splurge the extra few bucks on the good graham crackers, Hershey’s chocolate, and the fluffiest marshmallows. These peanut butter s’mores bars are no exception. Reach for the ingredients you’d use if you were making a s’more, and crumble them up into your cookie bars!
Don’t over mix the batter: The key to gooey, fudgy bars is only mixing until everything is just combined. This is not the time to be beating anything until it’s light and fluffy or over mixing which can cause too much gluten to build up in the batter.
Under bake them a little: No one likes an over baked cookie and cookie bars are no exception. The marshmallows will help keep these bars ooey gooey, but to get a truly fudgy pb s’mores bar you’ll want to bake them until they’re set on the edges and have puffed up, but are still a bit gooey in the middle. They’ll continue to bake as they cool so nothing will be raw – it will just set up into a perfectly soft cookie bar!

2/3cup chocolate (we used chopped up Hershey’s bars, but any chocolate will work!)
2/3 cup mini marshmallows
Instructions
Preheat the oven to 350°F and line a square pan (9 x 9 or 8 x 8 will both work), with parchment paper. Set aside.
In a stand mixer fit with the paddle attachment, beat together the butter and peanut butter until homogenous. Don’t over mix.
Add the brown sugar and mix well. Scrape down the bowl and add the egg and vanilla extract. Mix until combined.
Scrape down the bowl and add the flour, graham cracker crumbs, baking soda, and salt. Mix until combined and no streaks of flour remain.
Add the marshmallows and chocolate pieces and fold once or twice to distribute throughout the batter. Transfer the batter to the prepared baking pan and pat into an even layer.
Bake for 20 to 30 minutes or until set on the edges and a knife inserted into the middle comes out mostly clean. Allow to cool before slicing into 16 pieces. Enjoy!
Hi, how fine if a crumble do the Graham crackers need to be? I know sometimes stores can sell pre-crumbled grahams cracker crumbs, but those are pretty fine. Should the texture be similar to that or larger?
