These super fudgy raspberry cheesecake brownies will earn you major brownie points (pun intended thnx) with whoever you serve them to! They’re made with the perfect fudgy brownie base swirled with luscious ribbons of cheesecake and seedless raspberry jam. And while they taste worthy of a bakery, they’re made with just 10 simple ingredients and come together in under an hour which is a major win in my book!
Ingredients for raspberry cheesecake brownies
Unsalted Butter
Brown Sugar
Granulated Sugar
Eggs
Cocoa Powder
Salt
Vanilla Extract
All-Purpose Flour
Cream Cheese
Raspberry Jam
What kind of raspberry jam should you use to make these raspberry swirled brownies?
We prefer using seedless raspberry jam so you don’t have to deal with any of those pesky raspberry seeds, but if you can’t get your hands on it don’t worry! We’d made these with seeded jam and they are equally delicious! Try to grab a higher quality jam that’s made with real fruit and doesn’t have too many additional ingredients so that the bright raspberry flavor really comes through! Some of our favorite raspberry jams are: Bonne Maman, ALDI, Crofters, Tip Tree, and Good Good!
Alternatively, you can also make your own raspberry jam, or nix the jam altogether and stir in some fresh or frozen raspberries!
How to store your brownies so that they stay soft and fresh for days
Luckily the odds are in your favor because these raspberry cheesecake brownies are some of the softest, fudgiest brownies I’ve ever had. As long as you store these in an airtight container or bag in the fridge, they’ll stay fresh for up to 7 days! I keep most brownies at room temperature, but because these guys have cheesecake in them I recommend storing them in the fridge!

Preheat oven to 350°F. Grease and line a 8 x 8-inch pan with parchment paper on all sides and set aside.
In a large microwave-safe bowl, combine butter and sugar. Microwave for 30 seconds, then remove and stir with a whisk. Repeat process 2 more times. Though granules of sugar will remain, the goal is to get the mixture to a glossy finish.
Allow mixture to cool slightly, then add in eggs one at a time, whisking in between each addition. Whisk until the mixture lightens in color slightly.
Add in cocoa powder, salt, and vanilla extract. Fold in flour until just combined.
Pour mixture into prepared baking pan, using a spatula to spread the batter evenly to the edges.
In a medium size mixing bowl combine the cream cheese, granulated sugar and egg for the cream cheese swirl. Mix together until smooth and no lumps remain.
Drop big dollops of the cheesecake mixture and spoonfuls of jam on top of the brownies. Use a butter knife make big swirls, dragging up brownie batter from the bottom. Do not overswirl!
Bake for 35 minutes, testing for doneness by inserting a knife into the center of the brownies beginning at 30 minutes. You’ll know they’re done when the edge is set, but a knife inserted into the middle still comes out with a bit of brownie batter on it. It might take up to 40 minutes for them to cook through depending on your oven!
These are so yummy and came out perfectly! Super rich and delicious – the perfect extra indulgent dessert. I kept mine in the fridge once they cooled and they’re extraaa fudgy & have lasted several days.
My husband and I devoured these brownies! The only thing I would suggest is to lightly smash the jam before putting in on top so it blends a bit better when swirling. I’ll definitely make again 🙂

Ive never tried these at high altitude so I unfortunately do not have suggestions! I’m so sorry about that!

Do you have to use brown sugar in the brownies or can you substitute regular sugar?

You can use regular sugar but they’ll be slightly crunchier and not quite as soft!
