You’ll toss your chopped apples with salted caramel sauce and the perfect blent of cozy fall spices, wrap it all up in a buttery pie crust and bake it off. You’ll need a fair amount of ingredients to make this salty-sweet fall galette, but it’s well worth it for the incredible flavor combination. And most of the ingredients you’ll need are standard baking ingredients like butter, sugar, and spices. Here’s your shopping list.

We recommend using a mix of different apples for the most varied deep apple flavor. Tarter, cooking apples like granny smith and sweeter flavors pair together to make a well balanced apple flavor! This will ensure that some of the apples remain tart and crisp while others will break down into a jammy, cinnamon-sugar dream. For the sweeter apples you can use whatever you have on hand: gala, honey crisp, pink lady, envy…any kind will do.

Once you get the hang of it making caramel is straightforward and almost dangerously easy to make. I almost always have a batch in the fridge. You know…for emergencies. Here are our top tips to guarantee you perfect homemade caramel every time.

  • Use high quality butter: You’re only as good as your ingredients and with caramel your butter quality can really make or break your sauce. This is one time when it’s a good idea to splurge on that box that’s a few dollars more expensive.
  • Never leave your caramel sauce unattended: To make caramel sauce you essentially toast white sugar until it’s melted, before adding in butter, cream, and salt. Your sugar can go from toasty to burnt pretty quickly though, so make sure you keep a close eye on it!
  • Don’t forget the salt! Caramel is simply too sweet without it. A healthy amount of salt really deepens the flavor profile and will keep your caramel from tasting overly sweet.

Ingredients

for the salted caramel sauce

  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, room temperature
  • 1/2 cup heavy cream
  • 3/4 teaspoon salt

for the apple galette

  • 1 pie crust (can use storebought or homemade!
  • 3 apples, peeled and chopped
  • 1/3 cup caramel sauce (that you made above!)
  • 2 teaspoons cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • pinch salt
  • 1 egg, for egg wash

Instructions

  1. First, make the salted caramel sauce. In a heavy bottomed sauce pan, heat the sugar on medium low heat until its completely melted, swirling the pan gently every 20 seconds or so. The sugar will start to form clumps before melting slowly. Be patient and keep an eye on it to make sure it does not burn.
    Once melted, remove from heat immediately and stir in the butter. The mixture will violently bubble. You’re doing it right.
  2. Next, pour in the heavy cream and the salt. Stir until everything is combined. Pour 1/3 cup of the salted caramel into a large bowl (you’ll add the apples to it later, so make sure it’s big enough!) and place the rest of it in an airtight container. Set aside.
  3. Preheat oven to 375°F. Line a large baking tray with parchment paper.
  4. Sprinkle a work surface with flour. Roll out your pie crust into a 12-inch circle. Place dough onto prepared baking tray. Place a 9-inch cake pan in the center of the circle and press down ever so slightly. This will create an indentation to show exactly how far out to place your apples!
  5. Peel and core your apples. Cut them in half, then slice the halves into thin slices. Add the apples, spices, and salt to the bowl with the 1/3 cup of caramel. Use a wooden spoon (or your hands if you’re not afraid to get messy) to stir everything together until evenly coated.
  6. Transfer the apple to the center of your galette, arranging them however you desire. Lift the edges of the dough over the apples, folding every 3-4 inches as you go around.
  7. Mix egg with 1 tablespoon water and brush over crust. Bake for 30-40 minutes, until the apples are soft and the crust is golden brown. Serve with vanilla ice cream!
