And I think we can all agree that double chocolate > single chocolate. It’s math. Duh.

So it comes as no surprise that an indulgent chocolate cookie loaded up with chocolate chips is pretty much the best cookie in the whole world. I don’t know about you, but the moment I know that you a cookie as delicious as this double chocolate one exists, I have a tendency to start craving and needing them immediately.

Which is exactly why I made this super easy small batch double chocolate chip cookie. The perfectly portioned dough comes together in 5 minutes and you don’t need to chill the dough so you can have cookies in no time

Anything is a single serve dessert if you put your mind to it. But this small batch double chocolate cookie recipe makes two perfect, fudgy, double chocolate chip cookies. Because sometimes you want cookies but you don’t want 20 of them laying around. It can be a waste.

You’ll need mainly pantry staples to whip up these double chocolate chip cookies, but I always like to put together your shopping list for you to make your life a little easier. You’ll need these 9 ingredients, 1 bowl, and about 20 minutes to make these fudgy chocolate cookies. Here’s your shopping list!

Tips for perfect single serve double chocolate chip cookie

Cookies are one of the more straight forward baked goods to make, but a few tips never hurt anyone. You would certainly get by without these, but if you’re looking to really guarantee PERFECT chocolate cookies every time, make sure you follow these!

  • Use good chocolate: I know I just gave my whole schpeel on this, but I’ll just repeat it one more time to make sure it really stuck! Your chocolate will truly make or break these double chocolate chip cookies, so get the good stuff!
  • Don’t over mix the dough: Overmixing your dough will cause it to develop more gluten which can lead to a tough, bready cookie. Only mix the dough until it’s just combined and no streaks of flour remain!
  • Under bake them slightly: All the best cookies are underbaked and these fudgy chocolate cookies are no exception. You’ll want them to be ever so slightly underbaked when they come out of the oven so that they cool to perfectly gooey centers with chewy edges.

Ingredients

  • 2 Tablespoons unsalted butter, softened
  • 4 tablespoons brown sugar
  • 1 egg yolk
  • 1/4 teaspoon vanilla extract
  • 1 1/2 Tablespoons Dutch processed cocoa powder
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon salt
  • 4 Tablespoons all purpose flour
  • 3 Tablespoons semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside.
  2. Place the softened butter and brown sugar in a medium bowl. Use a fork or a whisk to mix together until smooth and homogenous.
  3. Scrape down the sides of the bowl and add the egg yolky and vanilla extract. Mix until combined.
  4. Scrape down the bowl and add the cocoa powder, flour, baking soda and salt. Mix until just combined and no streaks of flour remain.
  5. Fold in chocolate chips until evenly distributed.
  6. Divide the cookie dough into 2 big cookies and place onto your prepared cookie sheet 2 inches apart.
  7. Bake at 350°F for 11 minutes or until the edges are set but the centers are still gooey. Allow to cool for 10 minutes on the baking sheet until set. Enjoy!

  1. I just made this recipe. It’s very good and , as they say, quick and easy. Gooey in the middle and delicious. I think it would be alright if you used white sugar instead of brown. But I don’t understand what the white flakes in the photo are. It doesn’t call for salt flakes or coconut.

    • We sprinkled sea salt on top at the end just for fun! It is not part of the recipe, but you can always finish off cookies with a sprinkle of salt if desired!

  3. I saw this recipe on Instagram when I was in the mood for something gooey and chocolatey but definitely didn’t have the energy to make a whole big batch of cookies. I was so surprised by how well they turned out. Slightly fluffy and cakey, melty chocolate bits, and a perfect balance of sweet and salty. Plus you can always multiply the recipe, I doubled it and they turned out great. Definitely saving as a quick cookie recipe that doesn’t require ANY chill time because on some days that’s just too much effort 🙂
