This year we’re taking our pecan pie up a notch with a buttery caramel filling and chocolate chunks for the ultimate decadent, chocolate turtle inspired pie. It’s smooth, crunchy, buttery, salty-sweet and SO DARN GOOD. Plus, it’s enveloped in a homemade, buttery pie crust which certainly doesn’t hurt.

When we’re making pecan pie, you know we’re using Karo® Light Corn Syrup. I love baking with corn syrup because it provides sweetness AND moisture, meaning it doesn’t dry out or crystalize when it bakes (AKA the perfect silky smooth texture to complement those crunchy toasted pecans and bold chocolate).   • A pie crust: You can feel free to use a homemade pie crust or a store bought one, but if you have the time a homemade one will push this decadent pie over the edge!
  • Pecans: We like to use toasted pecans because it really brings out their nutty flavor. If you want the gorgeous design we have on top of this chocolate caramel pecan pie, make sure to grab whole pecan halves instead of pieces!
  • Salt: Salt is such an underrated ingredient in baked goods. It really makes or breaks the flavor and takes this bourbon pecan pie from one noted sweetness to seriously gourmet!

How to make the dreamiest, easiest homemade caramel sauce

This is Karo® Light Corn Syrup’s time to shine. No need for candy thermometers or fancy kitchen tools, simply place your Karo® Light Corn Syrup, brown sugar, and butter in a saucepan. Bring to a boil and boil for 1 minute, and then stir in your cream, salt and vanilla! Et voila–silky smooth homemade caramel! You’ll use that caramel sauce in your pecan pie filling in place of the corn syrup and it will impart a gooey, buttery flavor that will ensure this turtle pecan pie is the first thing to go on the dessert table!

  • Prep your crust ahead of time: Use a premade store bought crust, or prep a homemade one in advance to make this recipe super easy!
  • Make the caramel ahead of time: The salted caramel sauce will keep in the fridge for up to 3 weeks, so you can make it whenever you have some time! This will make throwing together your turtle pecan pie a breeze!
  • Invest in good ingredients: Pecan pie only requires a few ingredients, so splurge on the good butter, high quality pecans, great chocolate, and, of course, Karo® Light Corn Syrup.
  • Build in chill time: This turtle pecan pie recipe needs to rest and cool before you can eat it. I usually make this a day in advance and refrigerate it overnight.

Ingredients

for the salted caramel

  • 3/4 cup brown sugar
  • 1/2 cup Karo® Light Corn Syrup
  • 2 tablespoons butter
  • 1/2 cup whipping cream
  • 1/2 teaspoon sea salt
  • 1 teaspoon pure vanilla extract

for the rest of the pie

  • 9 inch unbaked pie crust (store bought or homemade will work!)
  • 3/4 cup of the caramel sauce you just made!
  • 1/4 cup light brown sugar
  • 2 eggs, room temperature
  • 1/2 teaspoon salt
  • 1 tablespoon vanilla extract
  • 2 1/2 cups whole pecans
  • 1/2 cup chocolate chips

Instructions

    1. First, make the caramel sauce. Combine brown sugar, Karo® Light Corn Syrup and butter in a 1-quart saucepan. Stirring frequently, bring to a full boil over medium heat and boil for 1 minute.
    2. Remove from heat; immediately stir in cream, sea salt and vanilla. Mix until completely smooth. Pour 3/4 cup of the caramel sauce into a large mixing bowl and then pour the rest of it into a mason jar for later use!
    3.  Preheat the oven to 350°F.
    4. In a large bowl, whisk together the caramel, brown sugar, eggs, salt, and vanilla extract. Set aside.
    5. Take the pie crust and put it in your pie tin, using your fingers to flute the edges.
    6. Pour in 1/2 of the pecans and the chocolate chips into the prepared crust and press into an even layer. Reserve the rest of the pecans to make a design on the top of the pie.
    7. Arrange the pecans in a circle around the edge of the pie, then repeat with smaller circles until you get to the middle. Place a few extra chocolate chips on top for good measure 🙂
    8. Pour the caramel, egg mixture over the nuts, making sure you cover everything.
    9. Bake for 30 minutes, then remove from the oven and place tin foil over the pie to prevent the crust from getting too brown. Cook for an additional 20 minutes with the foil.
    10. Remove from the oven and allow to cool for at least 2 hours in the fridge before serving! If desired, drizzle with the remaining salted caramel sauce.
