Fluffy Chocolate Chip Pancakes
Not to toot my own horn, but these are the best chocolate chip pancakes you’ll ever have. Like, I’m truly sorry to brag, but these are for real the fluffy chocolate chip pancakes of your dreams. And I do *not* make this claim lightly. Chocolate chip pancakes are a baking/brunch staple and a serious crowd pleaser. You simply can’t serve up a good brunch spread without them.
Imma breakfast girl. Bring on the waffles, cinnamon rolls, coffee cake and everything in between. The best part? It is totally acceptable to eat desserts for breakfast. In fact, it’s actually smiled upon? Like any other meal you would totally be judged for eating straight sugar and butter…but breakfast? Breakfast is a lawless meal. Eggs are just as acceptable as blueberry muffins.
Which is why I love pancakes and waffles. They sit perfectly in the middle of super sweet confections like pop tarts and sweet rolls, and omelets and breakfast bowls. Plus chocolate chip pancakes are the nostalgic breakfast food of my dreams, which is why I am SO excited to share this epic fluffy chocolate chip pancakes recipe with you all today!
What do you need to make chocolate chip pancakes?
Like most sweet breakfast recipes, these chocolate chip pancakes call for a handful of ingredients that are all pantry staples. Which is great news because it means you can whip these easy chocolate chip pancakes up pretty much wherever you are and at a moments notice. I have been known to make them for dinner. Don’t @ me.
- Flour: Regular old all-purpose flour is all you need to make this classic breakfast recipe. If you’re gluten free these chocolate chip pancakes also work perfectly with a cup for cup gluten free blend!
- Baking Powder + Baking Soda: Baking powder AND soda will give your pancakes that distinctly fluffy rise. A combination of baking powder and baking soda will give the pancakes that perfect fluffy texture.
- Salt: Salt is such an underrated ingredient in sweet treats. Salt is the perfect complement to an otherwise sugary treat.
- Sugar: Pancakes actually don’t call for much sugar, but feel free to adjust to your taste!
- Buttermilk: If you don’t have real buttermilk on hand (literally does ANYONE?!) don’t fret! You can easily whip up your own homemade buttermilk with just two ingredients!
- Egg: Make sure your eggs are at room temperature to ensure they incorporate seamlessly into your batter and give your pancakes that perfect rise!
- Butter: A few Tablespoons of butter in the actual batter + cooking these easy chocolate chip pancakes in butter keeps them just them decadent and buttery enough without a crazy amount of added fat!
- Vanilla Extract: Vanilla is not just for chocolate chip cookies or vanilla cake. Pure vanilla extract will take these easy chocolate chip pancakes from good to gourmet.
- Chocolate Chips: you can add as many as you’d like – I do about a half cup.
How to make chocolate chip pancakes
These buttermilk chocolate chip pancakes are super straight forward to make. Be warned–they are dangerously easy. You can whip these bad boys up in a pinch for a weekday breakfast or as a brunch treat too. So don’t come for me if you suddenly find yourself eating chocolate chip pancakes every morning. It’s not my fault they’re so darn easy.
- Mix the dry ingredients together.
- Make a well in the center and add all your wet ingredients.
- Mix the wet and dry ingredients together. Do NOT under any circumstances over mix. This is what will keep your pancakes moist and fluffy!
- Cook the pancakes on a hot, well buttered griddle or pan.
- When the edges start to bubble flip the pancakes.
- Serve warm with maple syrup and butter!
Tips for the best chocolate chip pancakes
Pancakes are one of the more straightforward breakfast foods to make at home. They’re not a huge undertaking like cinnamon rolls, take a fraction of the time of a coffee cake, and they don’t even require a mixer. As long as you have a bowl, a brain, and 8 ingredients you can make delicious chocolate chip pancakes in under 15 minutes!
- Don’t over mix the batter: This is really the only rule you need to follow when it comes to pancake making. This will keep your pancakes super tender with that melt in your mouth texture.
- Liberally grease your griddle: There is nothing sadder than a pancake that won’t flip. Grease your griddle LIBERALLY with butter to give your pancakes a crisp buttery finish and make flipping them a breeze.
- Don’t be alarmed by your first pancake: First pancakes are always a little off. Just throw it out, and keep going.

Ingredients
- 2 eggs, room temperature
- 2 cups buttermilk
- 3 Tablespoons melted butter
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 cups all purpose flour
- 3 Tablespoons granulated sugar
- 1 cup semisweet chocolate chips
Instructions
- In a large bowl, stir together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl whisk together the eggs, melted butter, vanilla extract and buttermilk.
- Add the wet ingredients to the dry ingredients, stirring only until just combined. The batter should be lumpy. Last, fold in the chocolate chips.
- Heat a large skillet or griddle on medium heat. Once griddle is hot, liberally grease with oil or butter (about 1 tablespoon per 3 pancakes). Pour ¼ cup of batter per pancake onto surface. Cook on one side until holes form around edges, about 2 minutes, then flip and cook on other side for additional 1-2 minutes. Don’t let the pan get too hot – you want a nice, even heat.
- Serve with a butter and a healthy dose of maple syrup! The options are endless!
Notes
- Whatever you do, do NOT over mix your batter. Over mixing will produce tough, dry pancakes. The batter should be a little lumpy with streaks of flour!
- Your first pancake will probably look a little off! Don’t worry – we always toss the 1st pancake (or eat it while we cook hehe), knowing that the rest of them will look picture perfect!
- Pay close attention to the heat on the pancake griddle. If your pan gets too hot, remove it from the heat to cool down, wipe off any burnt butter and wait to make more pancakes to prevent burning!
These are the BEST pancakes you will ever have!!! I recommend this recipe to everyone I know. I personally don’t like chocolate chips so I make it without them but they are absolutely incredible, so fluffy and comforting.
