Some people keep dream journals beside their bed. I keep a recipe journal. You see, every so often, a brilliant recipe idea pops into my head. Something so ridiculously tasty sounding that I can’t believe I haven’t thought about it before. It tends to happen right before I fall asleep– hence the recipe journal. I always sleepily jot down whatever I’m thinking of and go to bed dreaming of chocolate clouds.

So, say hello to chocolate covered pretzel brownies AKA the brownies of my literal dreams AKA super fudgy brownies loaded with chocolate covered pretzels.

Now, usually I would go on a whole spiel explaining how delicious these fun brownies are and why you need to make them, blah blah. But like…need I say more?

Like, BAM.

What are chocolate covered pretzel brownies?

Okay, fine. I will. These chocolate covered pretzel brownies are even tastier than they sound. They’re made with the fudgiest, most scrumptious homemade brownies recipe, loaded with chopped up chocolate covered pretzels (drool), and topped with more pretzels and drizzle with a whole bunch of melted chocolate.

Basically they’re what your salty-sweet chocolatey dreams are made of. Plus they’re the perfect treat to whip up for the Super Bowl, Valentine’s Day, or pretty much any occasion where you want to eat a decadent, show stopping dessert.

Not only do I adore this recipe because it’s delicious, but also because it is so darn easy to make. These fun brownies are a one bowl wonder AKA easy prep and easy clean up. Not to mention they’re made with only 9 ingredients?! Have you heard of a better recipe! Here’s what you’ll need:

  • Butter
  • Sugar
  • All Purpose Flour
  • Cocoa Powder
  • Bittersweet Chocolate
  • Eggs
  • Vanilla Extract
  • Salt
  • Pretzels

Tips for the best chocolate covered pretzel brownies

  • Make sure the sugar is melted: The key to getting fudgy, crackly top brownies like from the box is getting your sugar and butter to homogenize. Make sure that the butter and sugar mixture gets nice and glossy and smooth to ensure the perfect texture.
  • Use good chocolate: With simple recipes, the quality of your ingredients if SO important. Using high quality cocoa powder and chocolate will make or break your brownies. We love Rodelle cocoa powder!
  • Under bake them: Remember that baked goods continue to cook as they cool, so you’ll want to take the brownies out when they’re slightly underdone to get that quintessential fudgy texture.

Ingredients

  • 1/2 cup butter
  • 1 cup granulated sugar
  • 3/4 cup all purpose flour
  • 1/4 cup dutch process cocoa powder
  • 4 oz bittersweet chocolate, finely chopped
  • 2 eggs plus 1 yolk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/3 cup bittersweet chocolate baking chips
  • 1/2 cup pretzels, roughly chopped (you can also use chocolate covered pretzels if you want to take it up a notch)

  • 1/2 cup pretzels
  • 4 ounces chocolate, melted

Instructions

    1. Preheat oven to 350°F. In a microwave-safe bowl, melt the butter. Remove from microwave, stir in sugar, and melt both for 30 seconds. Stir again and melt for 60 seconds more. You want the sugar and butter to bubble up slightly, but not burn. This amount of time should do the trick.
    2. Remove mixture from microwave and stir in the chopped bittersweet chocolate. This should melt the chocolate completely. If it doesn’t, put it in the microwave for another 15 seconds. Whisk in all other ingredients except chocolate chips. Gently fold in chocolate covered pretzel pieces and chocolate chips.
    3. Pour batter into a parchment lined 8″x8″ pan.Bake for 30 minutes, or until a knife inserted in the center of the brownies comes out clean. Allow to cool before topping.
    4. Once the brownies are cool, lay a mostly flat layer of pretzels on top. Pour the melted chocolate over the pretzels, getting it into all the nooks and crannies. This will help the pretzels adhere to the brownies.
    5. Put the brownies in the freezer for 10 minutes to set before slicing into 16 pieces with a sharp serrated knife. Enjoy!

  1. to be honest i was a little skeptical of this recipe at first because of the no baking soda/powder and microwaving the sugar BUT they are probably the best brownies i’ve ever had. they are a little messy (more likely i am a little messy) so i would recommend crushing the pretzels slightly before putting them on top (so they stick better) and putting them in the freezer closer to 30 minutes.

  3. Hi! I plan to make this but was wondering if you had great dairy free substitutes for the butter. I wasn’t sure if I should go the ghee route or oil route. Thanks!

    • Hi Taylor! You could use a dairy free butter! I’ve never tried these with oil, but that might work too–the brownies will probably just be denser!

  4. I want to start by saying these are to die for! Actually life changing. But I did have some challenges getting the pretzel layer to stay attached to the brownies when I cut them. I would say next time I will do a base layer of chocolate directly on the brownies, then add the pretzels, then more chocolate. I think the extra layer of chocolate would really help the pretzels adhere. I also used some melted salted caramel chips from TJs along with the melted chocolate and it was insanely good.

    • Hi Grey! Yes we used the same semisweet chocolate, but if you prefer sweeter or darker chocolate you can feel free to use whatever you like!
