HAPPY SEPTEMBER FIRST BABAYYYYYZ. You know what that means: it’s officially apple season. Bring on alllll the Fall baking, cozy flavors, cinnamon sticks, and most importantly: fresh paples! Apples have to be my favorite ingredients to bake with in the Fall…okay well second to pumpkin, but second place definitely goes to apple. There’s nothing like a fresh, in season apple, except that is a tender, perfectly spiced cinnamon apple crisp.
Lucky for you, this cinnamon apple crisp recipe is super easy and absolutely delicious.
What is apple crisp?
No, it’s not pie. It’s BETTER. Crisp is generally made with a thick bottom layer of fresh fruit and topped with a buttery crumble topping. Unlike apple pie, apple crisp is completely crustless so the apple flavor can really shine through with just a hint of oat-y, buttery flavor in the crisp topping. Made with just ten ingredients in ONE bowl, apple crisp is wayyyy easier to throw together than a pie and is every bit as delicious.

- Butter
- Brown Sugar
- White Sugar
- Old Fashioned Oats
- Corn starch
- Cinnamon
- Nutmeg
- Cloves
- Salt
What kind of apples should you use to make homemade apple crisp?
We recommend using a mix of different apples for the most varied deep apple flavor. Use half tarter, cooking apples like granny smith and half sweeter flavors! This will ensure that some of the apples remain tart and crisp while others will break down into a jammy, cinnamon-sugar dream. For the sweeter apples you can use whatever you have on hand: gala, honey crisp, pink lady, envy…any kind will do.
How to make apple crisp:
Crisp is one of the easiest treats to throw together when you’re looking to use up a lot of fresh or frozen fruit. You’ll only need. few ingredients that you probably already have on hand. In just 3 easy steps (that we broke down more in the recipe card, don’t worry my novice bakers. We gotcha covered), you’ll have crisp within the hours.
- Peel and slice your apples.
- Combine the fruit with all the apple layer ingredients. Place in a pan.
- Combine all the topping ingredients. Sprinkle over the apples.
- Bake.
- Top with ice cream and EAT.

Ingredients
for the apple part
- 6 large apples (3 granny smith, 3 sweeter variety)
- 1/4 cup light brown sugar
- 1/4 cup granulated sugar
- 3 Tablespoons corn starch
- 1 Tablespoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 3/4 teaspoon salt
for the crisp topping
- 3/4 cup butter, cut into cubes
- 1 1/3 cup old fashioned oats
- 1 1/2 cups flour
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 Tablespoon ground cinnamon
Instructions
- Butter a 9 x 13 inch pan and preheat the oven to 375°F. Set the pan aside.
- In a large bowl mix together the sugars, cornstarch, spices and salt.
- Peel and core the apples before slicing into thin 1/8 – 1/4″ slices. Add the apples to sugar mixture and toss to combine. You can use two big wooden spoons to do this, but I like to use my hands instead. Add the apples to the buttered dish and arrange in an even layer. Set aside.
- In a medium bowl, stir together the oats, flour, sugars, cinnamon, nutmeg and salt. Use pastry cutter, a fork or your hands to cut the butter into the mixture until it resembles wet sand and clumps together. Sprinkle the mixture evenly over the apples.
- Bake at 375°F for 10 minutes before reducing the temperature to 350°F and baking for 35 more minutes or until the topping is golden brown and the apple layer is bubbling. Allow to cool before eating. We recommend serving with a big scoop of vanilla ice cream 🙂
Notes
- We recommend using a mixture of different apples to vary and deepen the apple flavor. We like to use 3 granny smith apples to make sure you have some hearty, tarter cooking apples to complement 3 fun, sweeter apples. Feel free to use whatever you hand (McIntosh, Pink Lady, Envy, Gala, Braeburn, Honey Crisp etc.)

Not too sweet. Perfect with several kinds of apples. I love a lot of topping so that was perfect. I’ll try it with monkfruit next time. It’s a keeper!
I’ve made several apple crumbles in the past but this is my favourite! It’s sweet enough and the crumble was a great balance of oatmeal + buttery crumble. I did have an extra cup of crumble leftover (maybe my pie dish wasn’t big enough) so I just froze it for next time 🙂
