Easy Cake Mix Cookies

IT DOESN’T GET EASIER THAN THIS. These ridiculously easy cake mix cookies are made with just 3 ingredients in a single bowl and come together in minutes. No seriously. 5 minutes of hands on time (probably less honestly) and 10 minutes in the oven and you can have fresh, warm cookies in your belly. So if you’re in a pinch for a cookie craving look no further.

What are cake mix cookies?

Exactly what they sound like! These easy cookies are made with a box of cake mix, so you don’t need to measure out all those pesky dry ingredients. Dump the dry cake mix into a bowl and then instead of adding all the liquid you’d usually add to a cake mix to make a cake batter, you’ll simply add a few eggs and some oil or melted butter to create a thicker dough that can be scooped into the tastiest cookies! They’re super soft and chewy with that nostalgic boxed cake-y taste that always shoots me right back to my childhood.

As aforementioned, these bad boys are stupid easy to make and only call for 3 ingredients (okay, plus salt…but that doesn’t count). They’re the perfect easy dessert to whip up if you have minimal ingredients or a nearly empty pantry. I also love making these for events that I need a ton of cookies for because they are just SO DARN EASY.

Okay, I’ll stop shouting my love for these little guys. Here’s your shopping list

  • Cake Mix
  • Eggs
  • Vegetable Oil
  • Salt
  • Optional Add-Ins

What kind of cake mix should you use with these cake mix cookies?

The beautiful thing about this cake mix cookies recipe is that you can use pretty much any standard cake mix to make these soft, buttery cookies. I’ve had success using the following brands’ mixes

  • Duncan Hines
  • Betty Crocker
  • Pillsbury

I have never tried this recipe with other cake mix brands, but if they make a standard size cake (usually 2 9 inch rounds or a sheet cake!) you should be able to use this recipe–it’s very forgiving!

But wait–there’s more! We used a funfetti cake mix here because sprinkles…duh, but pretty much any cake mix will work! From chocolate to vanilla to red velvet and everything in between, you can make these easy cookies in whatever flavor your tastebuds call for!

Ingredients

  • 1 standard cake mix (just the dry mix!)
  • 2 eggs, room temperature
  • 1/3 cup oil
  • 1/2 teaspoon salt

Instructions

    1. Preheat the oven to 350°F and line a cookie sheet with parchment paper. Set aside.
    2. In a large bowl, combine the eggs, oil and salt. Mix well.
    3. Add the dry cake mix and mix until smooth and no clumps remain. If desired, stir in extra sprinkles or other mix-ins!
    4. Use a 1 ounce cookie scoop to scoop out cookies 2 inches apart on the prepared cookie sheet. Bake for 10 minutes or until the cookie have puffed up and are set around the edges, but still a little undercooked in the middle.
    5. Allow to cool completely before eating!

  1. These are amazing!! I did have to sub the oil for applesauce cause my oil was expired.. I added some vanilla since my cake mix was just a white mix. And ooooh my goodness, I’ll definitely be making these again!! How easy and delicious!!






    • Thanks for sharing the sub for the oil! Fun fact tho, white cake mixes are actually vanilla as well. They are usually just made with egg whites instead of whole eggs. Adding extra vanilla never hurts tho! Especially bc a lot of cake mixes use fake vanilla.

  3. I tried making these and they tasted great but they look nothing like yours. I read through comments on your IG and TikTok and found others have the same problem. They stay poofy and don’t flatten and crinkle like yours. What’s the secret?

  4. I bought Betty Crocker Chocolate Fudge cake mix and I added milk and white chocolate chips. They are so yummy!

    How long do they last in a container?
