Golden Graham S’mores Bars
Who says you can only make buttery marshmallow bars with Rice Krispies?! Not me, that’s who. I don’t know why Rice Krispie treats though they could monopolize the marshmallow cereal bar field, but these Golden Graham s’more bars are giving Rice Krispie treats a run for their money. They’re made with golden grahams in place of the Rice Krispie cereal, and are obviously loaded with chocolate and mini marshmallow so you get all that nostalgic s’mores flavor.
They’re no-bake, super easy to make (like, 5 minutes easy), affordable and pretty much the perfect Summer dessert to whip up when you don’t have a campfire handy to satisfy your s’mores cravings

I like to call this kind of a recipe “a corner store recipe” because it’s the type of recipe that you can generally find all the ingredients for at a corner store or gas station, so you don’t even have to trek to the grocery store to throw it together. Here’s your shopping list…I don’t care where you find your ingredients from 🙂

Our tips for making perfect Golden Graham s’mores bars every time
These Golden Grahams bars are one of my favorite no-bake bars to make because they are SO easy to throw together. So easy, in fact, that I have made them hundreds of times and am therefore an expert. These are my three fail proof tips for getting perfectly soft and gooey s’mores bars every time.
Don’t overcook the marshmallows. This is the worst mistake you can make when it comes to making marshmallow treats. If you cook the marshmallows for too long they’ll get SUPER sticky, which can make your bars almost painfully chewy (it will still be delicious, but it will give you a jaw workout).
Work quickly. The only tricky thing about marshmallow bars is that they can get sticky and hard to work with real fast if the melted marshmallows start to harden. I recommend working quickly so that it’s easy to fold everything together and get it into your pan!
Press a few extra toppings on top of your bars. Sometimes all that mixing can leave your stir-ins looking a little tired and less appealing. I like to press a few extra marshmallows, chocolate pieces, and Golden Grahams on top solely for presentation purposes! But they are also tasty 🙂
How to store these marshmallow s’mores bars?
These Golden Grahams s’mores bars stay soft and chewy for days as long as they’re store correctly! We like to store these in an airtight plastic bag or container in the fridge. I find that keeping them in the fridge helps them to stay fresher longer. And I also just think they’re pretty tasty cold!
You can also freeze these in a freezer safe plastic bag for up to 3 months! Simply take out of the fridge and place on the counter for a few hours to thaw them out before eating. Or gnaw on a frozen one like a little s’mores gremlin if you’re impatient like I am. Heh.

1/2cup milk chocolate (we used roughly chopped Hershey’s bars)
1 1/2 cups mini marshmallows (for folding into the bars)
Instructions
Grease a 9 x 9 pan with cooking spray and set aside.
In a large pot over medium heat, melt the butter.
Add the regular marshmallows and salt and stir with a rubber spatula, scraping down the sides to make sure the marshmallows do not burn. As soon as the marshmallows are melted, remove from the heat immediately.
In a large bowl, add the Golden Grahams cereal and pour the marshmallow mixture of the cereal, using a rubber spatula to fold everything together.
Stir in the chocolate and mini marshmallows.
Spoon the mixture into the prepared pan, pressing down into an even layer.*
Place in the fridge to set for at least 20 minutes. Once set, use a sharp knife to cut the s’mores bars into 12 rectangles. Enjoy!

If your batter is especially sticky, I recommend spray a rubber spatula with cooking spray and using it to press the bars down into an even layer!
I chose this recipe for the picture and the 5 star reviews, but I was disappointed after I made them. They had Way too much marshmello mixture especially compared to the picture. This overabundance of marshmallow drowns out the flavor of the Golden Grahams.
Hi Gina! These bars are definitely marshmallow-y! If you want them to be less soft and more golden graham-y you can add an additional cup of golden grahams!
These bars bring all the flavors and joy of having smores, but without needing to have a bonfire! This will be a repeat recipe for sure! Highly recommend. 🙂
I made this a double recipe for a super bowl party and OH MY LORD they were AMAZING. We had a good amount of people come. Everyone RAVED about them. It was the only thing on the table that was gone. Will make again many times over! I think I like them even better than regular smores and that says a lot.
