We’ve all been there: 2 hours into a road trip and insatiably hungry. Maybe it’s the boredom, or maybe it’s the inexplicable need to nosh when you’re sitting quietly in the passenger’s seat. Either way, you need snacks. Badly.

But gas station snacks are horrible for you. You don’t want to fill up on junk. Just because you’re in the car doesn’t mean you are relegated to cheese puffs and chocolate bars. No ma’am. 

You want things that will make you feel good and not leave you satisfied for 13 minutes or until the next rest stop sign passes by and reminds you again of food, whichever comes first.

So in the spirit of summertime road trips, I’ve partnered up with my friends at Blue Diamond to create a plethora of easy, tasty, and healthy road trip snacks. Let’s do this, people!

First up: Rainbow Veggies. Not only are they gorgeous, but they take full advantage of summertime produce.

For the veggies:

1 red bell pepper
1 yellow bell pepper
3 orange carrots
1 green bell pepper
2 celery sticks
3 purple carrots

Slice all veggies into sticks or strips and arrange ROYGBIV in a tupperware container. Tada!

Next up are one of my favorite snacks: No-bake Blueberry Almond Breakfast Bars. These things are amazing, and not just for breakfast. They taste like a blueberry muffin, and are loaded with good-for-you fats and slow-releasing carbs.

To make them road-trip friendly, I wrapped them in a small piece of parchment to prevent sticking to each other, then placed them in a ziplock bag. Boom, done!

K so this next one I’m stoked about: Crunchy Wasabi Soy Snack Mix. It hits that savory/salty combo that I find myself craving by 3pm, and lasts for, like, 2 weeks. Score!

For the mix:

1/3 cup soy sauce
4 tablespoons butter, melted
1 tablespoon sesame oil
1 1/2 teaspoons powered wasabi
1/2 teaspoon salt
1 tablespoon ginger
1 teaspoon powdered garlic
5 cups rice chex
2 cups unsalted pretzels
3 tablespoons sesame seeds
1 cup sesame sticks
1 cup wasabi peas
1 cup Blue Diamond Wasabi & Soy Sauce Almonds (k I’m just warning you these are SO addicting!)

Preheat oven to 250°F. Combine soy sauce, melted, and sesame oil in a small bowl. Add in powdered wasabi, salt, ginger, and powdered garlic. In a separate bowl, Stir together chex, pretzels, and sesame seeds. Toss with sauce mixture to combine. Spread evenly onto a cookie sheet and bake for 40-50 minutes, stirring gently every 10 minutes.

Allow to cool completely before adding in sesame sticks, wasabi peas, and almonds.

Last, we stocked our basket with a few crunchy flax seed crackers, some plain roasted almonds, and a big ziplock full of berries. The berries were a great way to get in some fresh fruit without getting your hands all sticky. I opted for strawberries and blueberries.
