It is simply too hot to make anything other than this nutella chocolate chip cookie ice box cake. And truly there is nothing better than a delicious, beautiful dessert you can slap together with minimal effort, 5 ingredients and no oven time. Of course, it doesn’t hurt that this nutella chocolate chip cookie ice box cake is absolutely delicious too. Made with layers of sweetened whipped cream, nutella, and chocolate chip cookies, this ice box cake takes cookies and milk to a whole new level.

What is a nutella chocolate chip cookie icebox cake?

If you’re not familiar with icebox cakes, I’m so sorry. Icebox cakes are the perfect, easy dessert to throw together in the summer. They call for minimal ingredients and require verrrrry little effort. And yet, they always turn out beautifully and tasty. They’re a no frills, crowd pleaser that everyone will assume is fancier than it is.

So it comes as no surprise that this girl loves an icebox cake. But this nutella chocolate chip cookie icebox cake might be my favorite I’ve ever made. It’s creamy, crunchy, chocolatey, and full of nutella hazelnut flavor without being too overwhelming. It is sheer perfection.

Ingredients for nutella chocolate chip cookie ice box cake

You’ll only need 5 ingredients to make this delicious frozen dessert. This ingredient list is what I like to call a “corner store” list AKA staple ingredients you could find at your tiny corner bodega. No need to run to a big grocery store or grab any special ingredients!

Can you make this chocolate chip cookie ice box cake gluten free?

YES YOU SURE CAN. Simply swap out the store bought chocolate chip cookies (we used Chips Ahoy) for a gluten free chocolate chip cookie and you’re good to go!  That is the beauty of this recipe–it’s super easily tweaked and customized so you can fit it to whatever your needs are!

How to store this chocolate chip cookie ice box cake

Another wonderful feature of icebox cakes is that they’ll keep in your freezer for a decent amount of time. If you don’t finish your whole icebox cake in one sitting, simply wrap it tightly in plastic wrap and place in the freezer until ready to eat again! Our icebox cake lasted 2 months in the freezer before it started to taste a little freezer burnt. But I can guarantee yours will never last that long 🙂

Ingredients

  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • pinch of salt
  • 1/2 cup milk
  • 33 Chips Ahoy Cookies
  • 1 cup Nutella spread (about 1 7.7 ounce jar)

Instructions

    1. In a standing mixer fitted with a whisk attachment, beat the heavy cream until soft peaks form. Add the powdered sugar, vanilla extract and salt and beat well. Set aside.
    2. Line the inside of a standard-sized loaf pan with plastic wrap on all sides. Working in layers and starting with the whipped cream mixture, spoon and spread the whipped cream,  dunk the Chips Ahoy cookies in milk before laying out into an even layer, breaking the cookies up into small pieces to get them to completely fill in and cover the whipped cream. Drizzle a few heaping Tablespoons of Nutella over the cookies, using an offset spatula or a spoon to spread into an even layer.
    3. Repeat layers until your loaf pan is full, finishing with a layer of whipped cream. It’s completely up to you how much you spoon on each layer– if you want more whipped cream, do it! More chocolate, do it!
    4. Cover with plastic wrap and place in the freezer to set for at least 3 hours.
    5. When ready to serve, take the icebox cake out of the freezer. and lift out of the loaf pan, inverting the cake onto a serving dish.
    6. If desired, top with crumbled cookies. Use a hot, sharp knife to slice and serve! Enjoy.

  1. Looks delish! I know most recipes for icebox cake go in the fridge. Any chance this could be made in the fridge instead of the freezer? Thanks!

    • Hi Sam! You can absolutely make this in the fridge instead of the freezer! We usually do ours in the freezer because they last longer there and set up quicker (we’re impatient), but you can certainly refrigerate it instead!
