S’mores Ice Cream Sandwiches

It’s officially my favorite time of the year: s’mores season. I LOVE s’mores. It is truly my favorite flavor combination in the entire world. The combination of toasty marshmallow, decadent chocolate and buttery graham crackers is *chef’s kiss.*

So this summer I was like…why not add ice cream?! And oh baby, it was an Einstein level idea. These s’mores ice cream sandwiches are the perfect summer treat to whip up for all your summer occasions or any hot night!

Ingredients for s’mores ice cream sandwiches

The best part about these frozen s’mores is that they are SO easy to make. I’m talking 4 ingredients, 10 minutes, and one trip to the grocery store. You can find all your s’more fix-ins along with anything else you’ll need for summer occasions at your local ALDI. We love grocery shopping at ALDI because you can’t beat their prices and they truly have EVERYTHING you need. Gourmet cheeses? Check. Fresh flavorful produce? Check. High quality baking ingredients? Check. And of course marshmallows, graham crackers, chocolate and ice cream for these tasty s’mores ice cream sandwiches.

How to make s’mores ice cream sandwiches

So let’s get to it, friends! These s’mores ice cream sammys are super easy to make. Plus, you can quickly make more for more hungry guests or scale the recipe down to make one or two!

  1. Spread 1 Tablespoon of Berryhill Hot Fudge on one side of your graham cracker. Place in the freezer to let the fudge firm up.
  2. On the other half of your graham cracker place a Baker’s Corner Marshmallow down. Place on a cookie sheet and bake in the oven at 400°F for 5 minutes or until the marshmallow is golden brown and puffed up. Set aside.
  3. Spoon a small scoop of ice cream on top of the hot fudge.
  4. Place the graham cracker with the marshmallow on top of the ice cream and press down firmly to sandwich together.
  5. Place back in the freezer for 30 minutes or until ready to serve!
  6. Devour!

Tips for the best s’mores ice cream sandwiches

This sweet summer recipe is pretty much as simple as it gets, but there are a few tricks I have up my sleeve for you.

  • Put the fudge and the marshmallows on the backside of the graham cracker. You don’t have to do this, but it will look nicer. The front side of the graham crackers has the iconic graham cracker look, while the back is not as pretty.
  • Get your marshmallow super toasty. You want your marshmallows to be super ooey-gooey so that they compress into a perfect s’mores ice cream sandwich. If they are not toasty enough they’ll hold their shape too much which will make the sandwiches hard to eat.
  • Give them enough time to set up in the freezer. I know you’ll want to gobble up these s’mores ice cream sandwiches right away, but a half hour in the freezer will make them so much more enjoyable to eat. The cookies need some time to firm up so they don’t melt and fall apart while you’re eating them!

Ingredients

  • 4 Benton’s Graham Crackers
  • 4 Tablespoons Berryhill Hot Fudge Topping
  • 4 Baker’s Corner Marshmallows
  • 4 small scoops Belmont Vanilla Bean Ice Cream

Instructions

    1. Break the graham crackers in half horizontally so that you have 8 squares.
    2. Place 4 of the squares onto a plate with the smooth back side of the graham cracker up. Spread 1 Tablespoon of Berryhill Hot Fudge topping over each square. Place the plate in the freezer to set up while you toast the marshmallows.
    3. While the fudge freezes, roast the Baker’s Corner Marshmallows. You can do this on a skewer over a fire or a gas burner, with a blow torch, or in the oven. If using the oven, Place the marshmallows on the remaining 4 graham crackers and place on a cookie sheet lined with parchment paper. Bake at 400°F for 5 minutes or until the marshmallows are golden brown and gooey.
    4. Once the marshmallows are toasted, place each one onto the smooth side of the remaining graham crackers and set aside.
    5. Take the graham crackers with the fudge out of the freezer. Use a small ice cream scoop or a spoon to spoon a small scoop of ice cream on top of the fudge. Be careful not to do too much or your sandwiches will get super messy.
    6. Place the graham cracker with the marshmallow on top of the ice cream and press down firmly to sandwich together.
    7. Place back in the freezer to set up for at least a half hour or until ready to serve! Devour!
